5 Tips For Making The Best Spring Salads

1. LOOK BEYOND LETTUCE

The world of salads is vast and varied, and we’ve come so far from the simple romaine lettuce garden salads. Venturing into this diversity can transform your salad into a bouquet of colours, textures, and flavors. Consider the crisp freshness of thinly sliced cabbage, the tender chewiness of kale, the sweet crunch of carrots, or the cool bite of cucumbers. These ingredients not only offer a nutritional upgrade but also introduce a variety of textures that make each bite interesting. My favorite grains to add to a salad are quinoa, brown rice, red rice, forbidden rice, whole grain or legume based pasta, wild rice, white rice, sorghum, and even granola!

For an everyday go-to, simplicity is key. Oil is not to be shamed, but what I love about an oil free dressing is that there is a fresher non-oily texture and it also greatly reduces the saturated fat and calories in your meal. If you’re skeptical about going totally oil-free, try making any of the dressings above with just one tablespoon of cold pressed organic olive oil added. No shame here! A small amount can go a long way and can elevate the flavors of your ingredients, but if you try any of my recipes that are totally oil-free, I promise you won’t be disappointed!

Common Substitutes for Oil in Salad Dressing

Getting creative with substitutes for oil free dressing for salads is where the fun begins. Think outside the bottle – avocado or vegan yogurt for creaminess, tahini, miso paste, or aquafaba for richness, or fruit purees for a sweet, velvety texture. This 5 minute recipe is the perfect way to incorporate Sumo Citrus into your healthy eating habits and veganuary meal plan! All you need is 5 minutes and 10 ingredients and you have a healthy lunch, ready to go in no time! The Sumo Citrus is the star of the show, adding a natural, bright sweetness to every bite and perfectly complementing the creamy avocado and tangy vinaigrette.

Ingredients
  

  • 1 Sumo Citrus
  • 1 avocado, cubed
  • 1 cup shelled edamame
  • 1 green onion, chopped
  • ½ cup red cabbage, finely chopped
  • ¼ cup roasted cashews
  • 2 tbsp white balsamic vinegar
  • 1 tbsp olive oil, or tahini
  • 1 tbsp maple syrup
  • ½ tbsp coconut aminos
  • ½ tsp ground ginger

Method
 

  1. Effortlessly peel your Sumo Citrus and slice each section in half. Add to a bowl with avocado, edamame, cabbage, green onion and cashews.
  2. Whisk together the ingredients for the dressing and pour over the salad right before serving. Enjoy!

  1. Hi, I love your recipes – do you have a page specially on different salad dressings and dips please? I see how dips and dressing really take a vegan meal to a whole other level but find it hard to know what to put in them for variety! Would be great if you had a blog specially on these.
