If you don’t know this salad by now, let me introduce you! This viral Asian Cucumber Salad is the ultimate quick, refreshing, and flavor-packed dish. It was inspired by a traditional Korean Style Salad, and can be made a million ways. This one in particular has Jackfruitful flare! It’s oil free, totally plant based and has a short list of good for you ingredients! Variations of this viral cucumber salad have been taking over the internet and it all started with a guy named Logan – we’ll get into that later. For now, all you need to know is you need one whole english cucumber, a large container, a mandoline slicer, few ingredients you likely already have in your kitchen, and 10 minutes. This crunchy, tangy, and spicy salad is totally gluten free, oil free, refined sugar free, and the end result is light, refreshing and super easy to make.  

You don’t even need a knife or cutting board – just grab your mandoline, slice those cucumbers paper-thin, toss them into a jar, and shake it up with my Asian inspired dressing. Perfect as a light lunch, a side dish, or a simple snack, this salad has taken TikTok by storm. Easy & Quick Spicy Asian Cucumber Salad Ingredients

  • Nature Fresh Farm English Cucumber: This is the cucumber of choice as it’s probably the most crispy cucumber of them all and its taste is very mild so it easily soaks up all the goodness of whatever dressing you pair it with. English cucumbers also have thinner skins and fewer seeds than other cucumber varieties, which means they are less watery and help maintain a crunchy texture throughout the salad! My favorite variety is from Nature Fresh Farms – you can taste the quality difference and they stay fresh in the fridge much longer!
  • Shelled Edamame: This nutrient dense ingredient adds a pop of color and a boost of plant-based protein. It makes the salad more satisfying and adds a soft texture that contrasts nicely with the crunchy cucumbers.
  • Coconut Aminos: A gluten free and lower sodium alternative to soy sauce. Coconut aminos provide a mildly sweet and umami flavor that compliments the rice vinegar and sriracha perfectly. Coconut aminos don’t overpower flavor and can be a great substitute for sesame oil which is used in the original recipe.
  • Sea Salt: Sea salt helps to draw out excess water from the cucumbers, ensuring they stay crunchy. It also enhances all the flavors in the dish, balancing the sweetness and tanginess.
  • Rice Vinegar: Light, tangy, and slightly sweet, rice vinegar adds just the right amount of acidity to brighten up the salad. It helps balance the flavors and keeps the dish feeling light and refreshing.
  • Sriracha: This tangy and spicy hot sauce gives the salad a fiery kick. You can easily adjust the amount of Sriracha based on your spice preference, making the salad as mild or as spicy as you like. Make this a spicy cucumber salad by adding a few more squeezes of sriracha or chili flakes.

How to Make the Viral Asian Cucumber Salad

Slice the Cucumber

Start by grabbing your mandoline (find the one I recommend here) and adjust the slicer to your desired thickness (I slice at 1/8″). Using a mandoline ensures uniform slices, which allows the cucumbers to absorb the dressing evenly and stay crisp. Slice your cucumber directly into a wide-mouth mason jar making it easy to mix and serve.

Shake It Up

Once your cucumber slices are in the jar, sprinkle them with sea salt, screw on the lid, and give it a good shake. The salt helps draw out excess water from the cucumbers, which is essential to prevent the salad from becoming watery. After about 5 minutes, drain the liquid to keep your cucumbers crunchy and full of flavor. Skipping this step could lead to a soggy salad or your dressing being too diluted. 

Add the Dressing & Serve

Now it’s time to pour in your dressing ingredients; add coconut aminos, rice vinegar, sriracha, maple syrup, ginger, and garlic powder to the jar. Screw the lid back on and shake vigorously until everything is well combined. The mandoline-sliced cucumbers will soak up the flavors perfectly. Ingredients
  

  • 1 large Nature Fresh Farm English Cucumber
  • ½ cup shelled edamame
  • 2 tbsp coconut aminos
  • ⅛ - ¼ tsp sea salt
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tsp maple syrup
  • ½ tsp ground ginger
  • ½ tsp garlic powder

Instructions
 

  • Grab your mandoline and set the thickness to 1/8" thick, adjusting to be thicker or thinner based on your preference.
  • Carefully slice your cucumber and transfer to a large 32 oz Mason Jar. Sprinkle with 1/8 tsp of the sea salt, screw on the lid and give it a good shake. Let it rest for 5 minutes so the cucumber slices release excess water. After 5 minutes, drain the liquid.
  • Add in the remaining ingredients, except salt, cover and shake vigorously. Taste and season with additional salt if desired!
  • Eat straight from the jar or pour into a bowl and enjoy!
