Ingredients
  

Cabbage Salad

  • 4 cups napa cabbage, finely chopped
  • 2 cups broccoli, finely chopped, stem shredded
  • 4 green onions, chopped
  • 1 large carrot, shredded
  • 14 oz canned chickpeas, drained and towel dried
  • 1/2 cup sliced almonds

Oil-Free Sesame Dressing

  • 1/4 cup toasted sesame seeds
  • 1/4 cup maple syrup
  • 1/4 cup plain rice vinegar
  • 1/4 cup coconut aminos (or tamari soy sauce)
  • 2 tbsp roasted tahini
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • pinch of salt

Instructions
 

  • Add all ingredients for the salad to a large mixing bowl.
  • Whisk together the ingredients for the dressing in a jar and season to taste.
  • If serving immediately, drizzle the dressing over the salad and toss to combine. This salad is best dressed about 30 minutes prior to serving. If saving for later, wait to dress until day-of.
  • Sprinkle with additional sesame seeds if desired.
