The magic behind any vegan pasta dish is in the ingredients. There are a handful of the most important ingredients in my kitchen, must have kitchen essentials and favorite brands for pasta. Below I break down the Jackfruitful favorites to make shopping easier for you!

  • Cashews: Cashews are essential for so many reasons, cashew sauce? Vegan alfredo sauce, a rose sauce? Cashews can do it all. Soaking your cashews and blending ensures that you can have an amazing creamy base without any dairy! They are the ideal ingredient when considering a creamy vegan pasta sauce.
  • Nutritional Yeast: Nutritional yeast provides a cheesy flavor, making it a perfect vegan parmesan substitute or for increasing the flavor profile of a creamy vegan sauce.
  • Gluten-Free Pasta: Ensures that everyone can enjoy these recipes, regardless of gluten sensitivities. I listed my top three plant based, gluten free pastas below so make sure you check them out; they are perfect for these vegan recipes!
  • Red Pepper Flakes: A must in my kitchen, I love everything with a little kick; however that isn’t all red pepper flakes are good for as they are loaded with flavor! A little sprinkle of red pepper flakes goes a long way when creating a creamy roasted sauce, a spicy gochujang sauce or when looking to add a little kick to a creamy alfredo!
  • Olive Oil: Olive oil is great for sauteing your vegetables and creating depth in your sauces. It’s one of those ingredients that is just always great to have on hand!
  • Vegetables: Who doesn’t love vegetables? From red bell peppers, broccoli, diced tomatoes, mushrooms and more! Adding vegetables to any pasta dish is sure to increase your nutritional intake and enjoyability! 

What Vegan Parmesan Cheese is Best?

When it comes to vegan parmesan, I recommend looking for brands like Panacheeza that use nutritional yeast and nuts to mimic the savory, umami-rich flavor of traditional parmesan. If shreds are more your thing, brands like Violife and Follow Your Heart offer excellent options that melt beautifully into our pasta recipes. If going out and purchasing a dairy free parmesan cheese is not an option or there is not much around you; I highly suggest sprinkling nutritional yeast with a bit of garlic seasoning! If you mix the two in a ratio that you like I assure you it will have you singing with delight just the same!

Want to make a delicious vegan pasta? Sourcing the right gluten free pasta can be a pain in the butt if you don’t know where to start, and you’re not alone; when I started eating gluten free I often felt overwhelmed by the options not knowing what one was actually going to taste good, hold up with heavy sauces and not taste like cardboard. I have tried countless brands and the ones I always come back to are the following:

My 5 Secret Pasta Success Tips

  1. Bigger the Better: Use a big enough pot with plenty of water! Pasta can expand up to 3x its size when cooking, and using a large pot with 4 quarts water for every 1 lb of pasta will prevent it from sticking together or becoming starchy during cooking
  2. Channel Your Inner Salt Bae: Generously salt that pasta water – and I mean generously! You want about 1 tbsp salt per pound of pasta. Don’t worry, it won’t all be absorbed, but it adds extra savory depth to the noodles and results in a more flavorful end result. And no matter what you do, don’t you dare add oil to that pasta water!
  3. Stir It, Stir It Real Good: Your noodles will release the majority of their starch within the first few minutes of cooking, so the second they hit the water, stir frequently for the first few minutes, then you can chill out and let them do their thing.
  4. Don’t Set it and Forget It: Many factors can impact the cooking time of your pasta, so use the recommended cooking time only as a guide, and check often during the last couple of minutes. For the best texture, cook your pasta until *just* before it reaches al dente, as it will continue to cook slightly once drained.
  5. Save That Pasta Water! It’s liquid gold! When draining your noods, save 1 cup of pasta cooking water to add to the sauce as needed. This magical starchy liquid acts as glue or binder to help thicken and emulsify any sauce you choose, without having to add oil.

Vegan Creamy Sun Dried Tomato Pasta

You wont believe this creamy dreamy pasta is totally plant based, oil-free and gluten free.. It packs all the luscious deliciousness of traditional creamy Italian pastas, without any of the dairy. This healthier version of a decadent favorite is the perfect way to indulge in comforting meals without compromising on taste or nutrition. The rich and creamy sauce comes together in one skillet with very little chopping and no blending needed. Simply fold in your cooked gluten free pasta and some fresh arugula, sprinkle with vegan parmesan and fresh parsley and enjoy.

Equipment

Ingredients
  

  • 4 servings gluten free fettuccine
  • 4 garlic cloves, minced
  • 10 sun dried tomatoes, chopped
  • 1 tbsp italian seasoning
  • 1 tbsp balsamic vinegar
  • 3 tbsp tomato paste
  • 2 cups cherry tomatoes
  • 1 cup water or vegetable broth
  • 7 oz full fat canned coconut milk (thick cream only), half of a can
  • 3 tbsp nutritional yeast
  • salt and pepper, to taste
  • 2 cups baby arugula
  • ½ cup flat leaf parsley chopped
  • vegan parmesan, optional

Method
 

  1. Bring a pot of water to a boil over high heat and add the pasta. Cook according to package until al dente.
  2. Meanwhile, heat a large skillet over medium heat and add a splash of water, broth or cooking oil. Add in the garlic and sun dried tomatoes, sautéing for 2 minutes and adding additional water as needed. Add in italian seasoning, balsamic vinegar and tomato paste and cook for 2-3 minutes until caramelized.
  3. Add in the cherry tomatoes and water. Cover and simmer for 3-4 minutes until tomatoes are soft. Use a wooden spoon or spatula to smash the tomatoes and add in the coconut milk and nutritional yeast. Stir to combine and season to taste with salt and pepper. Simmer for about 5-10 minutes until thickened. Optional to add in 1/2 cup of pasta water at a time, if a thinner sauce is desired.
  4. Drain the cooked pasta and add to the sauce along with the arugula. Fold to combine and top with parsley and optional vegan parmesan.
