I was completely ruined – who tries French onion soup for the first time IN FRANCE?! As you can imagine, the bar was set very high after this. The rich, caramelized onions, the gooey, cheesy topping… I fell hard.

Fast forward just a couple years later: I went plant-based and realized that without cheese, my new French onion soup love story would come to a devastating end. How could anything compete with that cheesy, savory perfection? Then I discovered Panacheeza dairy-free parmesan. Do you see where this story is going?   • Yellow Onions: This recipe would not be complete without onions – obviously! These onions caramelize into a sweet, savory base that mimics the flavors of classic French onion soup. Their natural sugars develop as they cook, creating the dish’s rich depth.
  • Coconut Sugar: It’s optional, however it helps jumpstart the caramelization process and enhances the sweet, complex flavor of the onions.
  • Garlic: Adds a bold, aromatic depth to the dish and complements the caramelized onions beautifully.
  • Fresh Thyme: A classic herb for French onion flavors, thyme brings earthy, aromatic notes that elevate the dish.
  • Worcestershire Powder (or Vegan Worcestershire Sauce): Adds a savory, umami-rich depth of flavor, mimicking the taste of beef broth found in traditional French onion soup.
  • Balsamic Vinegar: A tangy addition that helps deglaze the pan, lifting the caramelized bits for even more flavor in the sauce.

  • Full Fat Canned Coconut Milk: My favorite dairy-free alternative to heavy cream. Full fat coconut milk adds a luscious, creamy texture to the sauce and it doesn’t overpower the other flavors.
  • Panacheeza Dairy-Free Parmesan: Absolutely necessary for all that cheesy goodness. This dairy free parmesan provides a nutty, cheesy topping that rounds out the dish and mimics the traditional parmesan in flavor and texture.
  • Fresh Parsley: A bright, herbaceous garnish that adds a fresh contrast to the rich, creamy pasta and caramelized onions.

How to Make One Pot French Onion Pasta

Making this one pot French onion pasta is so easy and comes together in under an hour! Follow these simple steps:

Caramelize the Onions

Heat vegan butter or oil in a large Dutch oven over medium heat. Add thinly sliced yellow onions, salt, and a pinch of sugar. Cook slowly, stirring every few minutes, until the onions are deeply caramelized. This step takes about 25 minutes but is worth every second!

Build the Flavor

Stir in minced garlic, fresh thyme, and Worcestershire powder, letting it bloom for a minute. Deglaze the pan with balsamic vinegar and white wine, cooking until the liquid evaporates.

Cook the Pasta

Add warm water mixed with vegan beef bouillon to the pot and bring it to a boil. Stir in the linguine, reduce the heat, and let it simmer, covered, until the pasta is tender and has absorbed the flavorful broth.

Finish the Dish

Stir in coconut milk and Panacheeza parmesan until the sauce is creamy and well-combined. Season with salt and black pepper to taste, garnish with fresh parsley, and serve hot.

Ingredients
  

  • 1 tbsp vegan butter, oil, or broth (for oil-free)
  • 2 large yellow onions, thinly sliced
  • 1 tsp kosher salt, more or less, to taste
  • pinch coconut sugar, optional (or any granulated sweetener)
  • 5 garlic cloves, minced
  • 3 tsp fresh thyme, finely chopped
  • 2 tsp Worcestershire powder, or vegan Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • ¼ cup dry white wine
  • 5 cups warm water
  • 1 tbsp vegan beef bouillon
  • 16 oz linguine, gluten free if desired
  • ¾ cup full fat canned coconut milk*
  • ½ cup Panacheeza dairy free parmesan
  • ½ tsp black pepper
  • ¼ cup fresh parsley, finely chopped

Method
 

  1. Heat a large dutch oven or deep pan over medium low heat. Once warm, add in the butter, oil or broth and swirl to coat.
  2. Next, add in the onions, sprinkle with salt, a pinch of coconut sugar to jumpstart the caramelization, and arrange in an even layer. Stir every 3-5 minutes, for about 25 minutes until caramelized. Add in the garlic, thyme and Worcestershire and stir for 60 seconds until fragrant, deglazing if needed. Next, add the balsamic and white wine and stir until liquid has evaporated.
  3. Combine the warm water with the vegan beef bouillon and pour into the pot. Increase heat to medium high and add in the pasta. Bring to a boil, reduce heat to a simmer, and cover, cooking for 15-20 minutes until noodles are al dente.
  4. Add in the coconut milk and Panacheeza parmesan and stir to combine. Season to taste with salt and add black pepper. Garnish with fresh parsley and serve hot.
