Crunchy cabbage, roasted vegetables, fresh herbs, grains, beans, crispy rice, cucumbers, corn, peaches, tofu, chickpeas, edamame, noodles, potatoes, lentils, and creamy dressings all deserve a spot in the salad conversation.

Honestly, some of the best no lettuce salads are the ones that make you forget lettuce was ever supposed to be involved in the first place!

What is a Salad Without Lettuce?!

If you asked me when I was a kid what my favorite salad was, I would without a doubt say Caesar salad. It’s a classic, it’s crunchy, packed with flavor, always reliable and honestly very low in nutrition. I’ve learnt a lot since then, and a salad without lettuce in many cases is likely more satiating, flavorful and beneficial than one with. 

When you don’t rely on romaine, iceberg or another simple leafy green to fill up the bowl, you end up relying on a lot of other ingredients that get a chance to make a big impact. 

Think chopped salads, slaws, or bean salads; in most cases, these do not rely on leafy greens at all and bring a lot of diversity to the table. I’m not knocking lettuce and leafy greens. I LOVE THEM, and you’ll notice they show up all over my website and the Jackfruitful app, BUT I think there is so much more to explore when it comes to salads; it’s never been that simple!

The beauty of salads without lettuce is that they’re often heartier, more versatile, and better for meal prep than traditional lettuce-based salads. How to Meal Prep Salads Without Lettuce

Lettuce free salads are some of my favorite things to meal prep. They are just heartier. Since ingredients like cabbage, cucumbers, chickpeas, lentils, grains, roasted vegetables, edamame, and broccoli hold up better in the fridge, you can prep them ahead of time without worrying about everything wilting by lunch.

For the best texture, store your heartier salad base separately from anything creamy, crunchy, or delicate. Ingredients like beans, rice, quinoa, cabbage, carrots, cucumbers, roasted vegetables, and tofu can usually be prepped and stored together. Keep avocado, fresh herbs, crispy chickpeas, toasted nuts, breadcrumbs, crispy rice, and dressings separate until just before serving so every bite still tastes fresh.

It’s all about putting the heartiest of the ingredients at the bottom and working your way up to the most delicate. Tips for Making the Best Salads without Lettuce

The secret to making the best no lettuce salads is thinking about balance.

  • Start with a strong base. Since you’re skipping lettuce, choose ingredients that bring structure, texture and something your dressing can cling to.
  • Then add something crunchy. This could be toasted nuts, seeds, crispy chickpeas, crispy rice, breadcrumbs, tortilla strips, roasted lentils, or crunchy vegetables. Crunch is what makes salads without lettuce feel exciting instead of flat.
  • Add something creamy. Avocado, tahini dressing, cashew dressing, vegan yogurt sauce, dairy-free cheese, hummus, or a creamy vinaigrette can help balance all the crisp, fresh ingredients.
  • Use plenty of herbs. Fresh basil, mint, cilantro, dill, parsley, and green onions can completely change a salad. 
  • And most importantly, don’t be afraid to get creative!
