The best chopped salad doesn’t just come from chopping up a bunch of ingredients and throwing them in a bowl; it takes a little finesse. The best chopped salad is all about picking the best ingredients so that each forkful is packed with texture, flavor and variety. This salad in particular is built around Edward & Sons Native Forest Organic Heart of Palm, which adds a tender, slightly briny bite that pairs perfectly with crunchy cucumber, snap peas, thinly sliced onion, and pumpkin seeds for texture. Every ingredient brings something to the table, so each bite feels balanced and interesting.

A creamy, vibrant vegan green goddess is made with avocado, cilantro, lime, ginger, and garlic. It’s bright, slightly spicy, and ties the whole salad together in a way that makes it feel complete. Edward & Sons Native Forest Organic Heart of Palm is my favorite because it’s clean, without preservatives, and the texture is always perfect! Heart of Palm is harvested from the inner core of certain palm trees. It has a tender, slightly firm texture and a mild, subtly briny flavor. Think somewhere between artichoke hearts and a very delicate asparagus. It’s naturally low in calories, rich in fiber, and adds a satisfying bite that makes any salad feel more substantial.

Every ingredient in this palm heart salad recipe plays a role in building texture, flavor, and balance. Here’s what you’ll need:

  • Edward & Sons Native Forest Organic Heart of Palm: I went with Native Forest, and I really love the quality of their heart of palm. It’s tender without being soft, slightly briny, and perfect for absorbing the dressing.
  • Persian Cucumbers: Added for freshness and crunch! Cucumbers are low calorie, light and very hydrating. You can also use an English cucumber if you’d like.
  • Sugar Snap Peas: My favorite vegetable brings sweetness and a crisp bite, adding contrast to the softer elements.
  • Edamame: A key source of plant-based protein, making this more than just a simple chopped salad.
  • Green Onions: Provide a mild sharpness that cuts through the richness of the dressing.
  • Pumpkin Seeds: Add crunch and healthy fats, helping round out the texture. Use sunflower seeds or nuts if you’d like!

Green Goddess Dressing Ingredients

The best green goddess dressing you’ll ever have!! It’s dairy free, oil free and so delicious you’ll want to put it on everything. Here is what you’ll need:

  • Avocado: The essential base to any green goddess dressing, it creates the creamy base and helps with the vibrant color.
  • Cilantro: Brings freshness and a herby flavor you cannot resist!
  • Lime juice: Adds brightness and helps balance the other ingredients. 
  • Ginger and garlic: Necessary for the depth of flavor, adjust these according to your own personal preference to make the salad less or more punchy!
  • Jalapeño: Optional but secretly a yes for me! Jalapeño really takes the flavor to another level, adding a subtle heat. Adjust the heat by removing the seeds and starting with less and adding more as you taste.
  • Maple syrup: Helps balance all the ingredients in the salad dressing, as well as adding a subtle sweetness to the salad as a whole.

Making this salad is quick, easy and not at all fussy. Chop everything, blend your dressing, toss and enjoy! 

Chop Everything Finely

Start by finely chopping all your vegetables. This is what makes it a true chopped salad recipe. Ideally, you chop every ingredient to be roughly the same size (small but not minced), so you get a little bit of each ingredient in every bite! Add everything to a bowl, including the unchopped ingredients such as the edamame and pumpkin seeds.

How to Make Vegan Green Goddess Dressing

Making a good green goddess dressing isn’t difficult; the ingredients do all the heavy lifting. Simply, blend the avocado, cilantro, lime, ginger, garlic, and jalapeño to create a creamy, vibrant sauce. Add the water, starting with the lesser amount and gradually adding more until you reach the consistency you’d like. with just the right amount of heat and brightness.

Green Goddess Dressing Ingredients
  • 1 avocado
  • 1 " piece ginger
  • 1 garlic clove
  • 1 large lime, juiced
  • 1 cup cilantro
  • 1 tbsp maple syrup
  • ½ jalapeño, seeds removed (optional, for spice)
  • ½ tsp sea salt
  • ¼-½ cup water, for desired texture

Method
 

  1. Add all of the salad ingredients to a bowl.
  2. Place the ingredients for the dressing into a high speed blender, starting with 1/4 cup of water. Puree until smooth and creamy, and season to taste, and add additional water if needed to thin.
  3. Pour the dressing over the salad and toss to combine, seasoning with salt and pepper if desired.
