If I had a dollar for the number of times a week I am asked about my skin routine, I’d have more golden retrievers! In all seriousness, this glowing skin didn’t happen overnight; it took years of trials and tribulations. Years of eating the wrong things, using the wrong products and hoping for a change. I’m at the point in my life where I think I’ve actually cracked the code, and you might be surprised by what I’m about to tell you. Carrots saved my skin!

Carrots are a large part of this skin glow-up. I’ve always enjoyed them, but I feel like I mostly ate them cooked. It wasn’t until I started making all types of carrot salads, drinking carrot juices, exercising regularly and cleaning up my diet in general that I really started to see a significant difference. I could go waaaay into detail about skin, but that’s a whole other blog (leave a comment below if that’s something you’re interested in). For now, let’s stick with carrot recipes… this Ribbon Carrot Salad, to be exact, is my new favorite glow from the inside out recipe.

They’re fresh, crunchy, a little spicy, a little tangy, and hit that perfect balance where you keep going back for another bite without even thinking about it. But beyond the flavor, this one actually does something for you. It’s light, super satisfying, and takes maybe 10 minutes start to finish with a simple Y-peeler turning those carrots into the prettiest ribbons. No chopping marathon, no complicated steps—just toss and go.

I’ve always believed that what we put in our bodies shows up on our skin. Skincare has its place, of course, but nothing has made me feel better than building meals around whole, plant-forward ingredients that do more than just taste good. This carrot salad (or in the skincare world is often called “retinol salad” is one of those recipes that feels aligned with that. Simple, fresh, and full of ingredients that support that clear, radiant, “I’ve been drinking water and minding my business” energy.

  • Cilantro: For freshness and a bright, herbaceous flavor that wakes up the whole bowl. It also gives the salad that clean, vibrant finish that works so well with lime and ginger.
  • Toasted Sesame Seeds + Black Sesame Seeds: Essential for adding crunch, nuttiness, and a little richness. They also bring minerals and healthy fats, which help make this salad feel more satiating.
  • Fresh Ginger: Gives the dressing warmth, spice, and that little zing that makes every bite more interesting. You’ll smell it the second you grate it, and it brings a fresh, slightly fiery note that works beautifully with the carrots.
  • Lime Zest + Lime Juice: Adds brightness, acidity, and a little vitamin C. The juice makes the dressing pop, while the zest brings a deeper citrus flavor that makes this simple carrot salad recipe feel extra fresh.

How to Make This Ribbon Carrot Salad

Start with clean carrots and a Y peeler. Hold the carrot firmly and run the peeler down the length of it to create long, thin ribbons. You’ll see them curl slightly as they fall into the bowl, which is exactly what you want. If the pieces feel too long, give them a quick tear or chop so the salad is easier to eat.

Add the Fresh Ingredients

Add the finely chopped green onions, cilantro, sesame seeds, grated ginger, lime zest, and lime juice to the bowl with the carrot ribbons. At this point, it should already smell bright and fresh from the ginger and lime. This is where the salad starts to feel alive. Add the chili crisp, rice vinegar, coconut aminos, maple syrup, and sea salt directly over the carrots. The dressing is simple, punchy, and comes together as you toss. Use clean hands or tongs to gently combine everything. You want the carrot ribbons coated, but not crushed.

Can I make this carrot salad ahead of time? I recommend it as this salad actually tastes better after it’s had a little time to sit. It also holds up extremely well in the fridge for up to four days, so feel free to meal prep it and enjoy it over the week.

Do I need a Y-peeler? While it’s not “necessary,” it definitely gives the salad more visual and textural appeal. It’s also just fun and easy to use, and who doesn’t love a kitchen gadget that elevates a meal so easily? This is the one that I used. If you don’t want to use a y-peeler, feel free to grate it using a box grater or just use a regular vegetable peeler.

What does this carrot salad taste like? It’s crunchy, tangy, slightly spicy, savory, and lightly sweet. The lime and ginger make it bright, the chili crisp adds heat, and the coconut aminos give the dressing depth. Pretty much like a dream come true!

Can I make this less spicy? Yes, use less chili crisp or skip it entirely if you want a milder version. You can add a small splash of sesame oil or extra coconut aminos for flavor without the heat.

Ingredients
  

  • 6 carrots
  • 4 green onions, finely chopped
  • ½ bunch cilantro, finely chopped
  • 1 tbsp toasted sesame seeds
  • 1 tbsp black sesame seeds
  • 1 inch piece ginger, grated
  • 1 lime, zested and juiced
  • 1 tbsp chili crisp
  • 2 tbsp rice vinegar
  • 2 tbsp coconut aminos

Method
 

  1. Use the y peeler to create carrot ribbons and place them in a bowl.
