Ingredients
- 1 large cucumber, thinly sliced into half moons
- 2 carrots, shredded
- 1 red bell pepper, thinly sliced
- 1 cup red cabbage, shredded
- 4 green onions, sliced
- 2 cups shelled frozen edamame, thawed
- ½ cup cilantro, chopped
- ¼ cup sliced almonds
- ¼ cup coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp sriracha
- 1 lime, juiced
- 1 tbsp ginger, grated
- 1 garlic clove, minced
- 1 tbsp maple syrup
- 1 tbsp sesame seeds
- salt, to taste
Method
- Add the veggies, edamame, herbs and almonds to a large salad bowl.
- Combine the dressing ingredients in a jar and stir with a fork to combine. Season to taste.
- Pour the dressing over the salad and toss! Sprinkle with extra sesame seeds if desired.

I made this salad tonight. It was good and I added chicken. I felt the dressing needed a bit more flavor so I added toasted sesame oil. I didn’t have cilantro. I think cilantro is a key ingredient in this salad. Wish I had remembered to buy it! Overall I really enjoyed this as a main dinner. I would make it again.
