Ingredients
  

  • 12 oz silken tofu, sliced
  • 1 avocado, sliced
  • 1 Persian cucumber, chopped
  • 1 green onion, finely chopped
  • 2 tbsp coconut aminos, amari or soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 tsp white miso paste
  • 1 tbsp gochujang, or chili garlic paste
  • 1 garlic clove, grated
  • 1' piece ginger, grated
  • 1 tsp roasted sesame seeds

Method
 

  1. Arrange the sliced tofu and avocado on a plate.
  2. In a bowl, combine the coconut aminos, rice vinegar, maple syrup, miso paste, gochujang, garlic and ginger. Stir to combine.
  3. Pour the sauce over the tofu and avocado slices and sprinkle with green onion, cucumber and sesame seeds. Enjoy chilled on its own or with rice!
