Ingredients
- 12 oz silken tofu, sliced
- 1 avocado, sliced
- 1 Persian cucumber, chopped
- 1 green onion, finely chopped
- 2 tbsp coconut aminos, amari or soy sauce
- 1 tbsp rice vinegar
- 2 tbsp maple syrup
- 1 tsp white miso paste
- 1 tbsp gochujang, or chili garlic paste
- 1 garlic clove, grated
- 1' piece ginger, grated
- 1 tsp roasted sesame seeds
Method
- Arrange the sliced tofu and avocado on a plate.
- In a bowl, combine the coconut aminos, rice vinegar, maple syrup, miso paste, gochujang, garlic and ginger. Stir to combine.
- Pour the sauce over the tofu and avocado slices and sprinkle with green onion, cucumber and sesame seeds. Enjoy chilled on its own or with rice!
