Miso Orange Dressing

  • orange juice
  • orange zest (optional)
  • rice vinegarraw cashew butter or
  • roasted tahini
  • white miso paste
  • maple syrupdijon mustard
  • ground ginger
  • garlic powder

This Orange Miso Palmini Noodle Layered Salad is a show-stopper at parties. Make it ahead of time and impress your guests with its beautiful presentation and delicious flavors. The low-carb noodles marinate in the dressing, while the veggies stay crisp and fresh. The dressing is packed with flavors of sweet and tangy orange, savory miso, and zesty ginger. Protein packed with the addition of edamame, and loaded with beautiful vibrant veggies.

Ingredients
  

Salad Ingredients

  • 1 pouch palmini angel hair noodles
  • 2 cups shelled edamame
  • cups mango cubed
  • 2 cups red pepper chopped
  • 2 cups broccoli chopped
  • cups carrots shredded
  • ½ cup roasted salted sunflower seeds
  • 1 cup green onion chopped
  • ½ cup roasted salted cashews
  • 1 cup parsley finely chopped

Miso Orange Dressing Ingredients

  • ½ cup orange juice
  • 1 tbsp orange zest optional
  • ¼ cup rice vinegar
  • 3 tbsp raw cashew butter or roasted tahini
  • 1 tsp white miso paste
  • 2 tbsp maple syrup
  • 1 tsp dijon mustard
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 lime juiced
  • ¼ tsp salt and pepper

Instructions
 

  • Drain the palmini noodles into a colander and rinse well. Transfer to a clean dish towel and squeeze out all the excess moisture! This tip is SO important for the noodles to take on the flavor of the dressing and have the very best texture.
  • Add the ingredients for the dressing to a blender - don’t skip it y’all, it takes 5 minutes to make and its so worth it for its dreamy flavor. Blend until smooth and creamy.
  • Add the ingredients in the order listed above, starting with the dressing and refrigerate until right before serving, up to 48 hours in advance. Flip upside down into the serving bowl, and enjoy!
