Spicy Beet Ginger Margarita

  • juicer
  • cocktail shaker


  • 1 beet
  • 1 jalapeno
  • 1” piece of ginger
  • 4 oz blanco tequila*
  • 2 oz aperol*
  • 2 limes juiced
  • pinch of salt
  • tajin for rim of glass
  • sprigs of mint


  • Juice the beet, jalapeño and ginger. Add 4 oz of the juice to a cocktail shaker with ice, and add tequila, aperol, lime juice, and salt. Shake well and strain into two ice-filled, tajin-rimmed glasses. Garnish each with a sprig of mint - enjoy!


*make this a delicious alcohol-free mocktail by subbing the booze for sparkling water!
