HAVE YOU EVER SEEN A MORE STUNNING COLOR? It’s 5:00pm somewhere and this Spicy Beet Ginger Margarita is calling your name… with a mocktail option to boot!

Equipment

  • juicer
  • cocktail shaker

Ingredients
  

  • 1 beet
  • 1 jalapeno
  • 1” piece of ginger
  • 4 oz blanco tequila*
  • 2 oz aperol*
  • 2 limes, juiced
  • pinch of salt
  • tajin for rim of glass
  • sprigs of mint

Method
 

  1. Juice the beet, jalapeño and ginger. Add 4 oz of the juice to a cocktail shaker with ice, and add tequila, aperol, lime juice, and salt. Shake well and strain into two ice-filled, tajin-rimmed glasses. Garnish each with a sprig of mint - enjoy!

Notes

*make this a delicious alcohol-free mocktail by subbing the booze for sparkling water!
