Ingredients
- 1 beet
- 1 jalapeno
- 1” piece of ginger
- 4 oz blanco tequila*
- 2 oz aperol*
- 2 limes, juiced
- pinch of salt
- tajin for rim of glass
- sprigs of mint
Method
- Juice the beet, jalapeño and ginger. Add 4 oz of the juice to a cocktail shaker with ice, and add tequila, aperol, lime juice, and salt. Shake well and strain into two ice-filled, tajin-rimmed glasses. Garnish each with a sprig of mint - enjoy!
