Ingredients
- 16 oz high protein super firm tofu
- 2 tbsp coconut aminos
- 1 tbsp balsamic vinegar
- ¼ cup water
- 1 tbsp vegan “chicken” bouillon
- ½ tsp smoked paprika
- ½ tsp sea salt
- ½ tsp garlic powder
- ½ tsp Worcestershire powder
- 8 slices sourdough, or gluten free bread
- 1 large avocado, thinly sliced or mashed
- 2 tbsp vegan mayo
- 8 lettuce leaves
- ½ cup sprouts
- 1 tsp everything bagel seasoning
- 2 tbsp pickled onions
- 1 large tomato, sliced
Method
- Preheat oven to 425 degrees.
- Whisk together the coconut aminos, balsamic, water, bouillon, and spices in a bowl.
- Use a Y-peeler or knife to cut very thin ribbons or slices, then add them to the marinade. Gently fold with tongs to coat.
- Use the tongs to transfer the tofu to the baking sheet and place in the oven. Bake for 20-30 minutes, gently flipping halfway through, until the desired texture is achieved. You can take it out earlier for a soft, tender, meaty texture, or leave it longer to get a bit crispy.
- While the tofu bakes, prepare the sandwich toppings. Generously salt the tomato slices, let them rest for about 5 minutes, then blot with a paper towel to remove excess water.
- Remove the tofu from the oven and let it cool slightly.
- Toast bread and spread a layer of mashed avocado on one side, and vegan mayo on the other. Top with lettuce to prevent your bread from getting soggy. Add remaining ingredients, including tofu, for the ultimate deli sandwich.
