The BEST Creamy Corn Soup!

A few weeks ago, a friend of a friend of a friend was in town, and I happened to see on social media that she needed to borrow a Dutch oven for an event she was catering. We had met once briefly about 5 years ago, but despite not really knowing each other, I love to help, so naturally I reached out and offered mine because apparently lending expensive cookware to strangers is how I make friends now 

She ended up borrowing my Dutch oven, a few of my chef knives, and some serving pieces, and we instantly bonded over food. When she returned everything, she also brought me some of the vegan corn soup she had made for the event. One bite and I immediately knew I needed to create my own version.

Growing up in Iowa, sweet corn was basically a delicacy of summer.

We waited all year for those few weeks when it was unbelievably sweet and good enough to eat straight off the cob. But most of the time, we ate it the same way: steamed, slathered in butter and sprinkled with salt. Delicious? Absolutely. But sweet corn has SO much more potential, and this recipe lets it shine.

Fresh corn simmers with the cobs to pull every last bit of that sweet summer flavor into the broth, then blends with sautéed onion, garlic, and creamy coconut milk until silky smooth. Pour it around a mound of rice and finish it with protein-packed edamame, green onion, black sesame seeds, and spicy chili crisp, and suddenly a simple corn soup becomes a full, satisfying meal. It’s sweet, savory, creamy, spicy, and basically everything I want to eat during these final weeks of summer.

What is a Soup Bowl?

A soup bowl is exactly what it sounds like: soup, but built like a meal.

Instead of serving soup on its own, you add something hearty to the bowl, like rice, noodles, beans, lentils, tofu, or vegetables, and then ladle the soup around it. The result is cozy and spoonable, but still filling enough to count as lunch or dinner. And honestly? I love this format. It gives you all the comfort of soup, but with more texture, more toppings, and more staying power. In this recipe, the silky corn cream soup base gets served with jasmine rice, edamame, green onions, sesame seeds, chili crisp, and lime. So yes, it’s soup, but it’s got a little more going on!

Ingredients for Creamy Corn Soup Bowls

  • Vegan butter, olive oil, or vegetable broth: This starts the soup by softening the onion and sweetening it. Use vegan butter or olive oil for richness, or a splash of vegetable broth if you want to keep the recipe oil-free.
  • Yellow onion and garlic: Onion and garlic build the soup’s base, adding depth, warmth, and the savoriness every soup needs.
  • Fresh sweet corn: Brings natural sweetness, texture, and that unmistakable summer flavor. You could use canned corn, but fresh is so much better whenever available! Do not throw away your cobs! Simmering the cobs right in the soup pulls even more corn flavor into the broth. It’s such a simple step, but it makes the soup taste so much more like peak-season corn.
  • Vegan chicken bouillon: Adds savory depth and makes the soup taste more rounded and satisfying.
  • Full-fat coconut milk: Makes this soup silky and creamy while keeping it dairy-free.
  • Fresh lime juice: Lime wakes everything up at the end, and you only need a small amount to taste the brightness. 
  • Jasmine rice: Rice turns this from a simple soup into a full meal. It adds substance and soaks up the creamy corn broth beautifully.
  • Shelled edamame: Adds plant-based protein, texture, and a fresh green bite.
  • Green onions: Add a fresh, mild oniony bite at the end.
  • Black sesame seeds: The finishing touch, but also a subtle nutty flavor, texture, and visual appeal.
  • Chili crisp: Optional, but the spicy, crunchy, savory topping is a great addition.
  • Lime wedges: Optional, but highly recommended, as they tie everything together!

How to Make These Creamy Corn Soup Bowls

These soup bowls are quick and easy to make. Here’s what you’ll want to do:

Start with the corn

Slice the kernels from the corn cobs, then set both the kernels and the cobs aside. Don’t throw away the cobs; when it’s time to simmer the soup, add them for extra corn flavor.

Sauté the aromatics

Heat the vegan butter, olive oil, or a splash of vegetable broth in a large Dutch oven or pot over medium heat. Add the diced onion and cook for 4 to 5 minutes, until soft and translucent. Add the garlic and cook for about 30 seconds, just until fragrant. Once the onions are translucent and the garlic is fragrant, it’s time to add the other components of the soup.

Build the soup base

Add the corn kernels, water, bouillon, coconut milk, salt, and pepper. Then nestle the reserved corn cobs right into the soup. Bring everything to a gentle boil, then reduce the heat and simmer uncovered for 15 to 20 minutes. This is also a good time to cook your jasmine rice, thaw your edamame, and chop your green onion.

Blend until creamy

Remove and discard the corn cobs. Carefully transfer the soup to a high-speed blender, or use an immersion blender, and blend until completely smooth and creamy. Stir in the lime juice, starting with just 1 teaspoon. Taste and adjust with more salt, pepper, or lime as needed.

Build the bowls

Divide the cooked jasmine rice between bowls, mounding it in the center of each one. Ladle the hot creamy corn soup around the rice, then top with edamame, green onions, and black sesame seeds. Add chili crisp and lime wedges if you want!

How to Serve These Soup Bowls

This recipe is a whole meal in itself, so you really don’t need to add anything else to the table! However, you can totally eat the soup on its own because it’s delicious, and forgo the jasmine rice, edamame, and other bowl ingredients. If you wanted to go the extra mile with the bowls, you could add grilled tofu, a simple side salad, or chili crisp for a little heat.

  • 1 tbsp vegan butter, olive oil, or a splash of vegetable broth for oil-free
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 ears fresh sweet corn
  • 3 cups water
  • 2 cubes vegan chicken bouillon
  • 14 oz canned full-fat coconut milk
  • 1 tsp sea salt, plus more to taste
  • ½ tsp freshly ground black pepper
  • 1 tsp fresh lime juice
To Serve
  • 1 cup jasmine rice, cooked
  • 2 cups frozen shelled edamame, thawed
  • 2 green onions, thinly sliced
  • black sesame seeds
  • chili crisp, optional
  • lime wedges, optional

Method
 

  1. Slice the kernels from the corn cobs, then set the kernels and cobs aside.
  2. Heat the olive oil in a large Dutch oven or pot over medium heat. Add the onion and sauté for 4 to 5 minutes, until soft and translucent. Add the garlic and cook for another 30 seconds, until fragrant.
  3. Add the corn kernels, water, bouillon, coconut milk, salt, and pepper. Add the reserved corn cobs into the soup. Bring to a gentle boil, then reduce the heat and simmer uncovered for 15 to 20 minutes. Simmering the cobs right in the broth pulls even more of that fresh sweet corn flavor into the soup.
