This TVP Sausage Potato Breakfast Skillet is my current weekend brunch obsession. It’s a one pan breakfast made with crispy golden potatoes, sweet peppers, shallots, and a quick homemade TVP breakfast sausage that’s high-protein, affordable, and insanely satisfying. Add vegan egg scramble, top with avocado, and you’ve got a cozy, healthy vegan breakfast that tastes just like a restaurant skillet!

Sausage Potato Breakfast Skillet

This TVP Sausage Potato Breakfast Skillet is the kind of breakfast that actually keeps you full and happy for hours. It’s a full-on restaurant brunch moment but without the price tag, the wait time, or the inevitable “why did I eat that much at 10am” feeling! This recipe was on serious repeat last month while Eric was doing veganuary because it totally gave him that classic breakfast vibe, and you know I had to outdo the local brunch spots he loves!

I’m talking, crispy golden potatoes, sweet peppers, caramelized onions and vegan eggs all getting tossed with savory TVP sausage that soaks up all the seasoning and brings that classic sausage vibe—without the meat! It’s hearty, satisfying, and somehow still feels clean and energizing, which is exactly what I want first thing in the morning. And yes… It’s also giving perfect lazy weekend brunch, because we are not cooking three separate components and dirtying half the kitchen before noon; this is all going into one skillet for minimal clean up!

Let’s be real though, the TVP is the real focus of this recipe. It’s high-protein, budget-friendly, and once it’s seasoned and cooked, it’s shockingly good. Whether you’re making this for weekend brunch, meal prepping for the week, or trying to convince someone that vegan breakfast recipes can actually be exciting, this skillet meal is going to hit. Serve it as-is, pile it into a breakfast burrito, or top it with avocado and hot sauce and call it a very strong start to the day.

The Perfect Weekend Brunch!

There’s something about a breakfast skillet that just feels right on a Saturday or Sunday morning. It’s warm, it’s hearty, it’s crispy, and it’s the kind of meal that makes everyone wander into the kitchen like, “Wait… what smells so good?” This is one of those one pan breakfast recipes that feels fancy, but it’s secretly super simple. This is not one of those breakfasts that leaves you hungry again in 45 minutes, so grab your ingredients and let’s get cooking!

TVP Sausage Potato Breakfast Skillet Ingredients

This sausage and potato skillet recipe uses simple ingredients that are easy to find, but when they all come together? It’s the kind of skillet breakfast you’ll crave on repeat.

  • Olive oil or dairy-free butter: This is optional, but it definitely will help you achieve super crispy potatoes, and will add that “diner skillet” flavor. You can absolutely use a splash of water and still get golden edges; you’ll just need to be a little more patient.
  • Yellow potatoes: They get crisp on the outside, tender inside, and they hold up perfectly when tossed with the veggies and sausage.
  • Green onions: You’ll use the whites for cooking and the greens for topping. They add flavor without overpowering the skillet, and they make everything feel fresher.
  • Mini sweet peppers: These add sweetness, color, and a little crunch. They’re perfect in a sausage veggie skillet because they balance the savory sausage and salty potatoes.
  • Shallot: It adds a mild sweetness and makes the whole skillet taste more elevated, without going full onion first thing in the morning!
  • Water + coconut aminos (or tamari): This is what hydrates the TVP and builds the base of the sausage flavor.
  • Maple syrup: What is breakfast without a little maple syrup? It’s what gives the TVP that classic breakfast sausage sweetness.
  • TVP (textured vegetable protein): TVP is high-protein, shelf-stable, affordable, and turns into the most convincing meatless breakfast sausage with almost no effort.
  • Nutritional yeast: Adds savory, cheesy depth and makes the sausage mixture taste richer.
  • Italian seasoning: Gives the sausage flavor a herby, savory backbone.
  • Dried fennel: This is the key ingredient that makes it taste like actual breakfast sausage. Don’t skip it.
  • Garlic powder: Adds a savory punch without the sharpness of fresh garlic.
  • Just Egg (or vegan egg replacer): This turns the recipe into a true breakfast skillet. It adds protein, texture, and makes it feel like a complete brunch plate.
  • Avocado: Optional, but highly encouraged. It adds healthy fats, creaminess, and ties everything together.

How to Make This TVP Sausage Potato Skillet

Making this skillet breakfast is as easy as it seems. Follow these simple steps and have the best brunch ever!

Crisp the Potatoes

Start by heating a large skillet over medium heat and adding your oil or dairy-free butter if using. Add the cubed potatoes and let them cook for 12–15 minutes, stirring only a couple of times. The key here is letting them sit long enough to get crisp and golden on the edges.

Sauté the Veggies

Once the potatoes are crispy, add the whites of the green onions, the sweet peppers, and the sliced shallot. Cook for 4–5 minutes until tender and fragrant. This is where the skillet starts smelling like a restaurant brunch menu. Season lightly with salt and pepper.

Make the TVP Sausage

While the veggies cook, make your TVP sausage in a small saucepan. Bring the water, coconut aminos, and maple syrup to a gentle simmer. Stir in the TVP, nutritional yeast, and seasonings, then turn off the heat, cover, and let it sit for about 5 minutes. It will transform into a meaty, sausage-like texture.

Combine & Enjoy!

Add the TVP sausage to the skillet, along with your scrambled Just Egg. Stir everything together gently so the potatoes stay crispy. Top with avocado slices and the green onion tops, and serve immediately while it’s hot and sizzling. This is one of those easy sausage potato skillet recipes that feels like a big deal, but truly couldn’t be simpler.

How to Customize Your TVP Sausage Potato Breakfast Skillet

This skillet breakfast is incredibly flexible, which is why it’s one of my favorite healthy vegan breakfast recipes. There are countless ways to make this recipe all your own. Here are a few suggestions:

  • Add red pepper flakes, cayenne, or a drizzle of hot sauce at the end if you want to turn up the heat.
  • Toss in spinach, kale, zucchini, mushrooms, or even chopped broccoli if bell peppers are not your thing.
  • Add black beans or kidney beans if you want to make this heartier.
  • If you want it more brunchy, top with salsa, dairy-free sour cream, or a little guacamole. It becomes almost like a breakfast taco skillet.

What to Serve with This Breakfast Skillet

This breakfast skillet recipe is honestly a full meal on its own, but if you want to build it into a brunch spread, here are some easy pairings. A side of fresh fruit is always a win, especially citrus or berries to balance the savory skillet flavors. A simple green smoothie or matcha latte pairs perfectly with that restaurant brunch feel. If you’re hosting, warm tortillas or toast on the side turns this into a build-your-own breakfast situation. People can scoop the skillet into wraps or eat it as-is.

Why You’ll Love This Sausage Potato Skillet

This sausage and potatoes skillet is the kind of meal that checks every box: it’s cozy, filling, protein-packed, and shockingly easy. It’s made in one pan, which means minimal cleanup, and it’s one of those skillet dinners that also works perfectly as breakfast. The potatoes get crisp and golden, the veggies add color and sweetness, and the TVP sausage brings that savory, meaty breakfast flavor without any of the heaviness. If you’re looking to eat more vegan breakfasts, or even just incorporate different ingredients into your diet, this is a great meatless breakfast to try out!
