Let’s be serious, in the summer, nobody wants to be in the kitchen. If you’re anything like me, you’d much rather be going on a morning walk with your pup, spending time soaking up the sun poolside, and if you are eating, it should be fresh and simple! This 4 ingredient High Protein Matcha Mousse recipe is the perfect summer breakfast (bonus points because it tastes like dessert!). It is proof that protein doesn’t have to be a concern on a plant based diet, and you can get a healthy serving first thing in the morning! 

A mousse that tastes indulgent yet is packed with protein, keto friend and easy to make is my kind of recipe! I have been making these high protein mousse recipes for a few months now, and you all love them! They are easy, delicious and perfect for morning meal prep. This healthy yet indulgent high protein mousse is rich in vanilla flavor and packs an energy boost from matcha. Whether you’re enjoying it as a snack, dessert, post-workout or as a balanced breakfast, this mousse is packed with 40 grams of protein per serving and is guaranteed to satisfy your cravings while keeping you fueled. It also takes little to no time to whip up, so let’s get into it!

What is the Keto Diet?

The ketogenic diet, or keto for short, is a high-fat, low-carbohydrate eating plan that focuses on shifting your body into a state of ketosis. In ketosis, your body burns fat for fuel instead of glucose. This metabolic shift can help support weight management, energy stability, and blood sugar control. Popular keto-friendly foods include healthy fats like avocado, coconut, nuts, seeds, and low-carb vegetables. Protein plays an important role too, especially for those using the keto diet to support muscle recovery or maintenance.

What is Matcha?

Matcha is finely ground green tea powder made from specially grown and processed tea leaves. It’s rich in antioxidants, provides a gentle caffeine boost, and has a naturally earthy, slightly sweet flavor. Unlike steeped green tea, matcha contains the whole leaf, offering a more concentrated source of nutrients. Matcha is also keto-friendly and often used in low-carb recipes for lattes, desserts, smoothies and in this instance, mousse! Pique makes my altime favorite matcha powder!

Ingredients for This Keto High Protein Matcha Mousse

To make this mousse, you’ll need:

  • Firm silken tofu: The creamy base for this mousse. It blends easily and adds plant-based protein. If you know me, you know I love a good silken tofu moment!
  • Ora So Lean & So Clean Vanilla Protein Powder: My absolute favorite plant based protein powder. This high-quality, dairy-free protein powder is packed with clean ingredients and great flavor that blends seamlessly into this recipe.
  • Ceremonial grade matcha: For that vibrant green color, earthy flavor, and antioxidant punch. This is my favorite matcha powder; I truly drink it daily.
  • Maple syrup (optional): Just a touch for those who prefer a hint of sweetness.
  • Pinch of salt: Balances the flavors.
  • Plain, unsweetened dairy-free yogurt: For topping and extra creaminess and plant based protein!

Choosing the Right Protein Powder

With so many protein powders on the market it can be really overwhelming to know which one is the best to use. Some proteins are great for smoothies, some better for baking but finding one that works in ever scenario – that can be difficult. As you know, I’ve tried them all! Plant based protein is unique because it requires a special science to get clean protein that tastes delicious, isn’t chalky and also uses minimal ingredients. 

Ora So Clean and So Lean is my absolute favorite – after lots of trial and error, it’s the only one I use. It’s my go to protein for so many reasons. I can put it into any recipe, and it does exactly what I want it to. Its flavor isn’t overpowering, it’s not chalky, and I can read all the ingredients. If you’ve never tried Ora Protein Powder, I highly recommend it! You will fall in love with it and use it in everything. I seriously even make shakes with just water and protein, and it’s not gross!

How to Make This Protein Matcha Mousse

This recipe couldn’t be easier. Just add tofu, protein powder, matcha, maple syrup, and salt to a blender. Blend until completely smooth and creamy—this should take about 30 seconds to 1 minute, depending on your blender. 

Taste and adjust the sweetness if needed. Divide the mousse into two jars or small bowls, then place in the fridge to chill for at least one hour. When ready to serve, top with a dollop of unsweetened dairy-free yogurt and enjoy chilled. Want to make more? Double or triple the recipe and you’ve instantly meal prepped breakfast for the week!

How to Store Protein Mousse?

Store the mousse in airtight containers or jars in the fridge for up to 3 days. It’s great for meal prep and holds its texture well. For best results, add any toppings just before serving.

    Loved this. I used extra matcha and half the maple syrup, also added a touch of vanilla paste and it was perfect. Going to try this with my Ube powder as well!

    I accidentally bought soften silken tofu vs firm but texture was great. I’d probably reduce the amount of protein powder or increase the matcha next time, as it tasted too much like protein powder for my liking.
