Waffle Ingredients
  • 2 cups gluten free flour
  • 1 tbsp baking powder
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 2 tbsp maple syrup
  • 3 tbsp neutral oil
  • 1 tsp vanilla
  • cups soy milk
  • 1 tbsp lemon juice
Berry Sauce Ingredients
  • 2 cups frozen mixed berries, or berry of your choice
  • ½ lemon, juiced
  • 2-4 tbsp maple syrup, for desired sweetness
  • 1 tsp vanilla extract
  • pinch of salt
Whipped Maple Cinnamon Butter Ingredients
  • 4 tbsp dairy-free butter
  • 2 tbsp maple syrup
  • ½ tsp cinnamon
  • pinch of salt

Method
 

  1. Preheat a waffle iron.
  2. Add all ingredients for the waffles to a bowl and use a fork to whisk to combine. Pour into waffle maker 1/2 cup at a time, or however much is needed to fill the iron adequately.
  3. Meanwhile, add the ingredients for the berry sauce to a small saucepan over medium heat and cover to let simmer and thicken for about 5 minutes. Optional to add a tiny bit of cornstarch, arrowroot powder or tapioca flour to thicken.
  4. Prepare the whipped butter by adding the ingredients to a bowl and using a mixer to whip until fluffy.
  5. Serve the waffles hot, spread with butter and top with the fruit sauce!
