Waffle Ingredients
- 2 cups gluten free flour
- 1 tbsp baking powder
- ½ tsp sea salt
- ½ tsp cinnamon
- 2 tbsp maple syrup
- 3 tbsp neutral oil
- 1 tsp vanilla
- 1¾ cups soy milk
- 1 tbsp lemon juice
Berry Sauce Ingredients
- 2 cups frozen mixed berries, or berry of your choice
- ½ lemon, juiced
- 2-4 tbsp maple syrup, for desired sweetness
- 1 tsp vanilla extract
- pinch of salt
Whipped Maple Cinnamon Butter Ingredients
- 4 tbsp dairy-free butter
- 2 tbsp maple syrup
- ½ tsp cinnamon
- pinch of salt
Method
- Preheat a waffle iron.
- Add all ingredients for the waffles to a bowl and use a fork to whisk to combine. Pour into waffle maker 1/2 cup at a time, or however much is needed to fill the iron adequately.
- Meanwhile, add the ingredients for the berry sauce to a small saucepan over medium heat and cover to let simmer and thicken for about 5 minutes. Optional to add a tiny bit of cornstarch, arrowroot powder or tapioca flour to thicken.
- Prepare the whipped butter by adding the ingredients to a bowl and using a mixer to whip until fluffy.
- Serve the waffles hot, spread with butter and top with the fruit sauce!
