Equipment

  • oven, mixer

Ingredients
  

  • ¾ cup cashew butter
  • 1 tbsp vanilla extract
  • cup maple syrup
  • ½ cup coconut sugar
  • cup super fine almond flour
  • 2 tbsp arrowroot powder
  • 1 tsp baking soda
  • ½ tsp salt, plus more for sprinkling
  • ½ cup vegan dark chocolate chips
  • ½ cup walnuts, chopped

Method
 

  1. Preheat your oven to 350 degrees and line two large metal baking sheets with parchment paper.
  2. Add the cashew butter, vanilla, maple syrup and coconut sugar to a bowl and use a hand mixer to combine for 30 seconds.
  3. Pour in the flour, arrowroot powder, baking soda and salt. Mix just until incorporated.
  4. Fold in the chocolate chips and walnuts. Use a 1.5 tbsp cookie scoop to transfer cookie dough to the baking sheets, spacing 2” apart. Sprinkle with extra sea salt and bake for 8-9 minutes. Remove from the oven and let cool for 5 minutes before enjoying.

    The salted chocolate chip walnut cookies are soooo good! My mixer is broken but I was fine mixing them by hand. My husband said they were awesome and he’s not even vegan. Another one I’ll be adding to the rotation!
