We are taking Taco Tuesday to a whole new level with these babies! Taco Filling Ingredients

  • Chickpeas: Adding a hearty, protein-packed element to the tacos; chickpeas are mild in flavor and pair perfectly with the curry spices, creating a satisfying and nutritious filling.
  • Maple Syrup: Adds a touch of natural sweetness that balances the spices and enhances the overall flavor profile. Its subtle caramel notes complement the savory elements of the dish.
  • Coconut Aminos: A soy-free alternative to soy sauce, coconut aminos add a subtle umami flavor and keep the recipe gluten-free. They enhance the overall depth of the seasoning blend.
  • Curry Powder: This blend of spices gives the tacos their bold, signature curry flavor. You can use whatever Indian Curry powder you have on hand or make your own blend. Currys aromatic and richness add depth to the dish and create a unique take on the typical taco.

  • Red Pepper Flakes: Adds a subtle heat, balancing the creaminess of the avocado. This slight kick of spice elevates the crema and complements the curry flavors in the filling. If spice isn’t your jam – please omit!

Slaw Ingredients

  • Red Cabbage: The base of any slaw is shredded cabbage! I chose red for its contrasting color and slightly stronger taste. It adds the essential crunchy texture to these tacos. 
  • Kale: Finely chopped kale adds a nutrient boost and a hearty texture. It’s a great way to add more greens and vitamins to your meal.
  • Red Onion: Thinly sliced red onion adds a bit of sharpness and crunch. Its bold flavor enhances the overall taste of the slaw. Go with white onion if you prefer a milder flavor.
  • Mini Sweet Red Peppers: Thinly sliced peppers add sweetness and a crisp bite. They contribute a delightful flavor and vibrant color to the slaw.
  • Lime Juice: Adds freshness and acidity, balancing the sweetness of the vegetables. It ties all the slaw ingredients together with a bright, tangy flavor.
  • Maple Syrup: Adds a touch of sweetness that complements the lime juice and vegetables.

To Serve Ingredients

  • Almond Flour or Corn Tortillas: These gluten-free tortillas provide a perfect base for the tacos, adding a slightly nutty flavor. They are sturdy enough to hold all the delicious fillings without falling apart.H

Origins of Yellow Curry

Yellow curry, a staple in Indian cuisine, is known for its intoxicating color and rich, aromatic flavor. Most often Indian curry blend consists of turmeric (where the color comes from!), cumin, coriander, garam masala (which is another blend in itself), mustard, chili and fenugreek. When all of these seeds and powders are blended together they create a special type of magic that we all call curry powder. 

Did you know that curry is made all over the world and there are different blends depending on its geographic location? For instance, Indian curry (and there are SO MANY variations) and Thai curry are TOTALLY different! There’s also Jamaican curry, Japanese, Middle Eastern and so many other regions that utilize curry blends in their kitchens every day! I love learning how other countries and cultures use spices and this recipe in particular plays with a traditional Indian blend which perfectly seasons the cauliflower and chickpeas! Paired with Mexican favorites like tortillas and crema, you’ve got yourself a fusion from the food gods!

How to Make Cauliflower Tacos

Making these Chickpea and Cauliflower Curry Tacos is so easy that you’ll have this recipe on repeat more than you think! It’s delicious and packs a flavorful punch; let’s get into it!

How to Roast Cauliflower

Preheat your oven to 400 degrees and line a large metal baking sheet with parchment paper. In a medium or large bowl, combine the maple syrup, coconut aminos, and seasonings. Add the cauliflower florets and chickpeas to the bowl, tossing them to ensure they are well-coated with the seasoning mix. Spread the mixture evenly on the prepared baking sheet and bake for 25 minutes, stirring halfway through, until the cauliflower is slightly charred on the edges.

Making the Dairy-Free Avocado Lime Crema

While the cauliflower and chickpeas are roasting, prepare the avocado lime crema. Add all the crema ingredients to a blender and puree until smooth and creamy. Adjust the seasoning to taste. 

Making Easy Cabbage Slaw for Tacos

Prepare the slaw by combining all the slaw ingredients in a bowl and tossing them together until evenly mixed. Set both the crema and slaw aside. Warm the tortillas over an open flame or in a skillet until the edges are slightly charred. Assemble the tacos by spreading a layer of the avocado lime crema on each tortilla, adding the roasted cauliflower and chickpeas, and topping with the fresh slaw. Serve immediately and enjoy!

Taco Filling Ingredients
  • 1 head cauliflower, cut into florets (about 6 cups)
  • 15 oz canned chickpeas, drained and patted dry
  • 1 tbsp maple syrup
  • 1 tbsp coconut aminos
  • 1 tbsp curry powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 tsp sea salt
  • ½ tsp black pepper
Dairy-Free Avocado Lime Crema Ingredients
  • ½ ripe avocado
  • ½ cup plain unsweetened vegan yogurt
  • 1 lime, juiced
  • ½ tsp red pepper flakes
  • 1 cup cilantro, stems and leaves
  • ¼ cup fresh dill
  • ¼ cup fresh mint
  • ½ cup water
  • salt and pepper, to taste
Slaw Ingredients
  • 1 cup red cabbage, shredded
  • 2 Tuscan kale leaves, finely chopped
  • ¼ red onion, thinly sliced
  • 2 mini sweet red peppers, thinly sliced
  • ½ lime, juiced
  • 1 tsp maple syrup
  • salt and pepper to taste
To Serve Ingredients
  • 12 6” almond flour or corn tortillas

Method
 

  1. Preheat oven to 400 degrees and line a large metal baking sheet with parchment paper. Add the maple syrup, coconut aminos, and seasonings to a medium mixing bowl and stir to combine. Add in the cauliflower and chickpeas and toss to coat. Spread on the prepared baking sheet and bake for 25 minutes, stirring halfway through, until the cauliflower has darkened on the edges.
  2. Meanwhile, prepare the crema by adding all ingredients to a blender and pureeing until smooth and creamy. Season to taste. Next, prepare the slaw by adding all ingredients to a bowl and tossing to combine. Set aside.
  3. Warm the tortillas oven an open flame, or in a skillet, until the edges are just slightly charred. Fill each tortilla with a layer of crema, roasted cauliflower and chickpeas, and top with the slaw.

    Oh my gosh Jackie the cauliflower and chickpea curry tacos were amazing! The sauce was just so good I did step up the red pepper a bit, and the way the chickpeas and cauliflower turned out was just fantastic! You hit it out of the park again.

    These tacos were fantastic! So much flavour. My husband and daughter said they tasted like a restaurant meal. Even though there seems to be a lot of steps, they were very easy to prepare.
