I’ve got something that’s gonna make you shout, “shawar-mazing!” I’ve always been fascinated by the rich tapestry of Middle Eastern cuisine. For those of you unfamiliar with shawarma, it’s a beloved street food classic, marinated in a melange of spices and then slow-cooked to perfection.

As always, I love shaking things up a bit. So, instead of the traditional meat, I’ve opted for tofu. Why tofu, you ask? Well, it’s a blank canvas, ready to soak up any flavor you add to it; offering a protein-packed punch. But this isn’t just about swapping out ingredients; it’s about reimagining, reinventing, and reintroducing flavors in a way that’s both respectful to tradition and excitingly innovative!

Many might not know this but a lot of Middle Eastern food is not only a brilliant hit of flavor but it also has a significant portion of dishes that are inherently vegan!

Rooted in a rich agricultural history, the Middle East has long been cooking with some of our favorite grains, legumes, vegetables, and fruits. Common staples like falafel, hummus, tabbouleh, and baba ganoush showcase some of the region’s amazing plant-based delights. These dishes, crafted with age-old recipes, highlight the region’s commitment to fresh ingredients and wholesome meals, proving that Middle Eastern culinary traditions have been championing vegan-friendly feasts long before it became a global trend.

Tofu Shawarma Bowl

A delicious vibrant bowl filled with middle eastern flavors and warming spices. crispy shawarma-seasoned tofu is paired with comforting couscous, crisp veggies, savory hummus, and a creamy lemon tahini sauce. Dinner made easy and great for meal prepping!

Ingredients
  

Shawarma Tofu Ingredients
  • 16 oz high protein super firm tofu, cubed
  • 2 tsp coconut aminos
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • ½ tsp ginger
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp salt and pepper
Bowl Ingredients
  • 8 cups mixed greens
  • 1 cup gluten free couscous, cooked and cooled
  • 1 English cucumber, chopped
  • ¼ red onion, finely chopped
  • 1 semi-ripe avocado, cubed
  • 1 cup cherry tomatoes, chopped
  • ¼ cup parsley, chopped
  • 1 tbsp red wine vinegar
  • ½ lemon, juiced
  • 1/2 cup hummus
Sauce Ingredients
  • ¼ cup roasted tahini
  • 1 lemon, juiced
  • 1 tsp garlic powder
  • water, as needed to thin

Method
 

  1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add cubed tofu to a bowl and drizzle with coconut aminos and spices. Toss to combine. Spread on the baking sheet and bake for 20-25 minutes until crispy.
  2. Give the bowl a quick rinse and dry and add the cucumber, onion, avocado, cherry tomatoes, parsley, red wine vinegar and lemon juice. Stir to combine and season to taste with salt and pepper. Divide the mixed greens between 4 serving bowls. Top with couscous, cucumber salad, hummus and crispy tofu.
  3. Mix together the ingredients for the dressing and drizzle over bowls. Enjoy!

    This was the best tofu dinner EVER! Both me and my husband are always skeptical about making tofu because it never comes out the way we want. UNTIL THIS!! I can’t wait to make this again but also to just cook todu this way and add it to other dishes. So grateful for these recipes! Now time to pick the next one!

    This is a fantastic recipe! The tofu came out so crispy and flavorful. It was very easy and quick to put together and I love that all of the seasoning stuck to the tofu with just the use of coconut aminos, no oil. I had to control myself from eating all of the tofu off of the sheet before dinner! This was a new and refreshing flavor profile on tofu for me and I love it. My partner said the same… he couldn’t get enough! This will definitely be on the regular recipe rotation list in our home. Thanks so much!
