Ingredients
  

  • 1 ripe avocado peeled
  • 1 garlic clove
  • 2” piece of fresh ginger
  • 1 jalapeño more or less for desired spice
  • 2 lemons juiced
  • 1 cup cilantro
  • ½ cup mint
  • ½ cup parsley
  • 1 tbsp maple syrup
  • ¼ tsp salt or to taste
  • water if needed, to thin

Instructions
 

  • Add all ingredients except water to a high speed blender and puree until smooth and creamy. Add 1 tbsp of water at a time and continue to blend, if desired, for a thinner dressing or sauce. Store in an airtight container in the fridge for up to 5 days and enjoy on dishes such as salads, pastas, grilled tofu, roasted veggies, raw veggies and more!
