Ingredients
- 1 ripe avocado, peeled
- 1 garlic clove
- 2” piece of fresh ginger
- 1 jalapeño, more or less for desired spice
- 2 lemons, juiced
- 1 cup cilantro
- ½ cup mint
- ½ cup parsley
- 1 tbsp maple syrup
- ¼ tsp salt, or to taste
- water, if needed, to thin
Method
- Add all ingredients except water to a high speed blender and puree until smooth and creamy. Add 1 tbsp of water at a time and continue to blend, if desired, for a thinner dressing or sauce. Store in an airtight container in the fridge for up to 5 days and enjoy on dishes such as salads, pastas, grilled tofu, roasted veggies, raw veggies and more!
