Ingredients
- 16 oz high protein super firm tofu, crumbled
- 2 tbsp tomato paste
- ½ cup buffalo sauce
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp nutritional yeast
- 12 mini street taco tortillas, corn or almond flour
- ½ cup dairy-free shredded cheese, optional
- 1 cup plain, unsweetened dairy-free yogurt
- 2 limes, juiced
- ½ bunch cilantro
- ½ - 1 jalapeño, seeds removed (adjust for desired spice)
- 1 garlic clove
- 1 tbsp maple syrup
- pinch of salt
Method
- Preheat oven to 425 and line a large metal baking sheet with parchment paper.
- Heat a large skillet over medium heat and add a splash of cooking oil or water to coat.
- Add in the crumbled tofu and cook for about 10 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
- Add the tomato paste, buffalo sauce, maple syrup, spices, and nutritional yeast; stir to coat and season to taste with salt and pepper (I did not need to use either).
- Fill each tortilla with a layer of filling and add a sprinkle of cheese if desired. Fold in half and place on the baking sheet, being sure not to overcrowd.
- Bake for 16-20 minutes, flipping halfway through, until golden and crisp.
- While tacos are baking, prepare the sauce by adding all ingredients to a blender and pureeing until smooth and creamy. Season to taste.
- Serve tacos hot with sauce for dipping.

Loved this recipe! Tasted great and not overly complicated. Taste test your buffalo sauce ahead of time to make sure it’s not too spicy. I used less buffalo sauce and added some plant based yogurt to tame it down since what I had was very spicy. In addition, pay attention to how much lime juice you get from 2 limes when making the cilantro lime dipping sauce. My limes were very juicy and the sauce ended up being way too thin but tasted great. I chopped some avocado and tomatoes to serve on top. I served this with Mexican brown rice and black beans.
