Crispy Buffalo Tofu Tacos with Creamy Cilantro Lime Sauce
Crispy Oven Baked Tacos stuffed with spicy buffalo tofu crumbles and baked until golden might just be the best weeknight meal possible! Crunchy, oil free and served with a creamy dairy-free cilantro lime sauce for dipping, they’re also gluten-free-friendly and packed with plant-based protein.

Instructions
Preheat oven to 425 and line a large metal baking sheet with parchment paper.
Heat a large skillet over medium heat and add a splash of cooking oil or water to coat.
Add in the crumbled tofu and cook for about 10 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
Add the tomato paste, buffalo sauce, maple syrup, spices, and nutritional yeast; stir to coat and season to taste with salt and pepper (I did not need to use either).
Fill each tortilla with a layer of filling and add a sprinkle of cheese if desired. Fold in half and place on the baking sheet, being sure not to overcrowd.
Bake for 16-20 minutes, flipping halfway through, until golden and crisp.
While tacos are baking, prepare the sauce by adding all ingredients to a blender and pureeing until smooth and creamy. Season to taste.
