Instant Soup, But Make it Healthy!

Aside from how incredibly easy these meal prep soup jars are to make, the flavor is also next level. The broth comes together instantly thanks to the Edward & Sons Not-Chick’n Bouillon Cubes. The bouillon cubes deliver that classic savory broth flavor instantly, and their organic vermicelli rice noodles cook beautifully with nothing more than boiling water. Edward & Sons has been a pioneer in organic, plant-based pantry staples for decades, and their ingredients make healthy meals like this incredibly easy to pull together. The addition of the white miso, sriracha, coconut aminos, and chili crunch oil creates a rich, savory base with just the right amount of heat.

Make a few jars at the beginning of the week, keep them in the fridge, and you’ve got healthy lunches ready whenever you need them. Just add hot water, wait five minutes, and enjoy a fresh, flavorful noodle soup that beats anything from a packet. It’s meal prep that actually makes your life easier.

What is Jar Soup?

Jar soup is a quick and clever way to meal prep soup without having to actually make the soup beforehand! Simply take all your soup ingredients and layer them inside a mason jar so that hot water can transform them into a fresh bowl of soup in minutes. The bottom of the jar holds concentrated flavor builders like bouillon, miso, or sauces. Vegetables and proteins sit in the middle, while noodles rest at the top to stay dry until the last moment. The result is one of the best jar soups for quick lunches. These mason jar soup recipes work beautifully for healthy soup meal prep, making them perfect for work lunches, travel meals, or busy weeknights when you want something nourishing without cooking from scratch.

Ingredients for Vegan Noodle Soup Jars

Here is everything you’ll need for these soup jars, along with a few alternative ingredients:

  • Edward & Sons Not-Chick’n Bouillon Cubes: These bouillon cubes are the foundation of the broth. As soon as hot water hits the jar, the cube dissolves and creates a savory base that mimics classic chicken noodle soup while staying completely plant based. The low-sodium version allows you to control the salt level while still delivering deep umami flavor.
  • White Miso Paste: Miso adds body and complexity to the broth. Its fermented richness deepens the flavor so the soup tastes as if it simmered for hours instead of minutes.
  • Chili Crunch Oil: A spoonful of chili crunch oil brings warmth and texture. When the hot water hits the jar, the oil floats through the broth and distributes subtle heat and aromatic spices.
  • Coconut Aminos: This soy-free alternative to soy sauce adds gentle sweetness and saltiness. Tamari or soy sauce would also work here.
  • Sriracha: A small amount of sriracha provides brightness and a gentle kick. As the soup sits, the heat blooms through the broth.
  • Garlic: Adds instant aroma when the boiling water is poured into the jars.
  • Red Bell Pepper: Add natural sweetness and color to this vegetable noodle soup. They soften slightly but retain a bit of bite for texture. Any color bell pepper would work here.
  • Red Cabbage: Thin slices of cabbage create crunch and vibrant color. They also hold up beautifully in jar soup meal prep, staying fresh for several days in the fridge.
  • Carrots: Carrots bring sweetness and a desirable crunch to the soup. A great alternative would be broccoli or brussels sprouts.
  • Edamame: Essential plant-based protein and a satisfying bite! Edamame is a great way to add protein and texture with ease.
  • Silken Tofu: Firm silken tofu adds gentle creaminess and extra protein. Its delicate texture works beautifully in vegan noodle soup because it absorbs the surrounding broth flavors.
  • Green Onions: Add freshness and a subtle onion aroma that lifts the whole soup.
  • Edward & Sons Organic Rice Vermicelli: These delicate rice noodles are ideal for mason jar soup mix recipes. They soften quickly when boiling water is added, making them perfect for a quick noodle soup recipe without needing to cook them separately or spend any time simmering.

How to Make These Vegan Noodle Soup Jars

Making these mason jar soups is simple, but the layering order is what makes the recipe work.

Build the Flavorful Broth Base

Start with a clean 16-ounce wide mouth mason jar. Drop a bouillon cube into the bottom of the jar, then add the miso paste, chili crunch oil, coconut aminos, and sriracha. These concentrated ingredients form the base of your broth and will dissolve beautifully when hot water is added. Add the minced garlic next; you’ll notice its aroma right away, and once the boiling water hits later, the scent becomes even more fragrant.

Layer the Vegetables

Add the sliced bell peppers, cabbage, and carrots. These vegetables create a protective layer between the broth ingredients and the noodles, helping everything hydrate evenly. As the soup steeps, the vegetables soften slightly while still keeping a bit of texture.

Add the Protein and Fresh Herbs

Next, add the edamame and silken tofu. The tofu should look delicate but still hold its shape. Once the hot broth forms, it will absorb the surrounding flavors and become even more savory. Sprinkle the sliced green onions on top for freshness and aroma.

Finish with the Noodles and Store

Place the rice vermicelli noodles on top of the jar. Keeping the noodles at the top ensures they stay dry during storage, so they soften perfectly when boiling water is added. Seal the jar with a lid and store it in the refrigerator until you’re ready to eat!

Time to Eat: Add Hot Water and Enjoy!

Preparing these soup jars to eat couldn’t be easier! Simply bring water to a boil and pour it into the jar until all ingredients are completely submerged. Tighten the lid and let the jar sit for about four to five minutes. Give the jar a gentle shake or stir to combine everything, and your vegan noodle soup is ready to enjoy. You can pour the soup out into a bowl or eat it right from the jar! It truly couldn’t be any easier.

Choosing the Noodles

Not all noodles behave the same in mason jar soups because some take much longer to soften than others. Without a doubt, I would highly suggest using Edward & Sons Organic Rice Vermicelli as they are thin enough to hydrate quickly in the poured hot water. Thicker noodles may require longer soaking time or pre-cooking. If Edward & Sons noodles are not available to use, look for noodles labeled quick-cooking or instant. These soften properly without needing a stovetop. Keeping the noodles at the very top of the jar also helps prevent sogginess during storage.

Other Noodle Soup Variations

One of the things I love the most about this homemade soup mix recipe is how versatile it is; you can customize this to fit your personal preferences quite easily! For a miso-forward version, increase the miso paste and add mushrooms and bok choy for a cozy miso soup jar. For something a little more ramen inspired, you could swap the red cabbage for napa and add a few drops of sesame oil. The options are truly endless, and you may find that you enjoy experimenting with whatever ingredients you currently have on hand!

Tips for Meal Prepping Soup Jars

A few small adjustments make a big difference when preparing meal prep soup containers.

  • The layers matter! Always add your soup base at the bottom, vegetables in the middle and noodles at the very top. This ensures all ingredients stay fresh as long as possible.
  • Use jars with a large opening so that it’s easy to add the ingredients in AND possible to eat out of! Here are the jars that I used for this recipe.
  • Make sure you store these meal prep soup jars in the refrigerator. They will keep fresh for up to three days.
