Ingredients
- 2 cups superfine blanched almond flour*
- 1 cup plain, unsweetened dairy-free yogurt*
- 2 tbsp everything bagel seasoning, or seasoning of choice (optional)
Method
- Preheat oven to 350 and line a large metal baking sheet with parchment paper.
- Add almond flour and yogurt to a mixing bowl. Stir with a fork to combine and then use a rubber spatula or your hands to knead for a minute or two until firm, doughy, and not sticky. If your dough is too sticky, add a bit more flour or knead longer.
- Roll into balls and roll in the everything bagel seasoning. Bake for 20-22 minutes. *IMPORTANT: Let cool completely!! Otherwise they will be a bit crumbly.
- Enjoy right away or store in a paper bag on the counter for up to 5 days. IMPORTANT!: If they get a little soft/moist, place them in the oven for about 5 minutes at 300 before enjoying!

Could this be made with flavored yogurt?
Hey Michelle, if you make it with flavored yogurt, your bagel bites will take on the flavor which might not be complimentary. I would stick with unflavored, unsweetened
Could you use oat flour instead of almond?
Hi Quinn, I have not tested this recipe with almond flour as I find it to be a little bit more brittle, you may need to play with the ratios if you give it a try. let me know how it goes
I was not a believer because I rarely trust 2 ingredient recipes but this is no joke the best 2 ingredient snack I’ve ever baked. I used Fage 2% Greek yogurt and did roll it in a lot less everything bagel seasoning than she did in the pictures. It was so perfectly flavorful and moist, like a biscuit. My partner and I had to stop ourselves from eating them all in one sitting

Yes! They freeze so well, and when I reheat them, I like to pop them in the oven at 350 for about five minutes.
How many calories did it account for?
I made this 4x now and the inside is always a little wet like it is not cooked through. I wonder where I went wrong.
Hi Pi, Yogurt types can vary in moisture content – a thick sturdy yogurt is best for these bagel bites. I would recommend trying a thicker yogurt like Cocojune or Culina, or adding more almond flour to your mixture.
Hi Pi, Thank you for sharing your experience, I am sorry to hear your bites are not turning out as anticipated. If your batter is too wet you can always adjust the amount of flour you’re using to make it a bit more tacky. If you find that you break one open and its not cooked enough, give them a few more minutes in the oven!

I ran short of almond meal so I topped off my 1/2 batch with 1-2 tbsp of oat fiber and vital wheat gluten. Threw in a tbsp of nutritional yeast and 1/2 tsp baking powder “just because”. Shaped some baglish by poking a finger down the middle of the balls. Waiting for them to come out of the oven now. They smell great!

I want to like them more than I do. No one else in my family does but have been trying to curb carb consumption. The taste is off, maybe it’s because I’m using Greek yogurt. And the texture is mealy inside.
Hi there, the greek yogurt would definitely create a tangier taste. I would try using a more neutral option like a coconut yogurt next time you prepare them. If you are not a fan of the texture of almond flour (it is definitely mealier than traditional flour) these bites can also be made in a 1:1 ratio of all purpose flour, gluten free flour, or oat flour for a more traditional texture. I rolled mine in a mix of sea salt sesame seeds & fine dried seaweed…delish

I needed to add more flour so I used 2 1/2 cups with one cup of yogurt and it only made 19 instead of 20 bites each bite for me equal a little under 90 cal each. I was surprised after figuring out the nutritional value they were a little bit high for my liking.
Thanks for sharing Angela! You may want to consider making the bites a bit smaller next time to achieve a lower calorie bite.
