Pomegranate Balsamic Dressing

  • aged balsamic vinegar
  • pomegranate juice
  • lemon
  • roasted tahini or olive oil
  • dijon mustard
  • coconut aminos

Layered salads offer so much more than just an eye-catching presentation. They’re incredibly practical, allowing each ingredient to maintain its unique texture and taste until the very moment of serving. As the layers are gently nestled atop one another in the canister, they avoid becoming soggy or wilted, preserving the crispness of vegetables and the freshness of herbs.

The stratified assembly means that the dressing is at the bottom, subtly marinating the lower layers without overwhelming the entire dish. When it’s time to eat; the preparation is already finished and all you have to do is toss it all in a large bowl! I love the fact that I can make it ahead of time because I am often the busy host, and this ensures a stress-free, flavorful, and nutritious contribution to the table every time!

Holiday Harvest Layered Salad

This Layered Salad is perfect for the holidays! With the jewel toned layers it's sure to be the star of any holiday get together and the flavors are festive, bright and delicious! The ingredients are exceptionally crunchy, fresh and satisfying, with a grain-free granola that adds the perfect layer of crisp! This granola has NO added sweetener so it's the perfect addition.

Ingredients
  

  • 1 small red onion, diced
  • 28 oz canned chickpeas, rinsed and drained
  • 2 cups shaved brussels sprouts
  • 1 cup pomegranate arils
  • cups carrots, shredded
  • cups broccoli, finely chopped
  • cups red cabbage, shredded
  • 1 cup parsley, finely chopped
  • 1 cup struesli original grain-free granola
Pomegranate Balsamic Dressing Ingredients
  • cup aged balsamic vinegar
  • 3 tbsp pomegranate juice
  • 1 lemon, zested and juiced
  • ¼ cup roasted tahini, or olive oil
  • 1 tsp dijon mustard
  • 2 tbsp coconut aminos
  • ½ tsp garlic powder
  • ½ tsp salt and pepper
  • ½ tsp ground ginger
  • 1 tbsp maple syrup

Method
 

  1. Add all ingredients for the dressing to a jar and whisk to combine. For a thicker, creamier dressing, puree the ingredients in a blender for 60 seconds. Pour into the bottom of the canister.
  2. Layer the remaining ingredients in the order listed above starting with the onions. This gives the onions time to marinate in the dressing which also takes the edge off their pungent taste! This salad is best prepared at least 24 hours in advance, but can even be made a few days ahead of time.
  3. When you're ready to serve, flip the canister upside down over a large bowl and it dresses itself! Toss if desired and enjoy!
