We’ve officially reached supreme levels of cozy with this Creamy Wild Autumn Rice Soup! 

It’s hearty, creamy, loaded with fall vegetables, and feels both nourishing and incredibly comforting. Wild rice simmers with tender butternut squash, mushrooms, celery, and plenty of herbs until the whole pot smells like fall, then coconut milk comes in at the end to make the broth rich and creamy without any dairy.

And this soup has some substance to it!

Wild rice and cannellini beans give every bowl a hearty boost of plant-based protein, while butternut squash, kale, mushrooms, beans, and wild rice pile on the fiber. Divided into six servings, you’re looking at roughly 12–13 grams of protein and 9–10 grams of fiber per bowl, making this one of those cozy dinners that actually keeps you full. The cannellini beans also melt into the soup just enough to add even more creaminess without blending anything!

Best of all, the entire recipe comes together in ONE pot. The wild rice cooks right in the broth, soaking up all that thyme, sage, and oregano while the squash gets deliciously tender. How To Make This Creamy Autumn Wild Rice Soup

Start the Soup Base

Heat a large Dutch oven over medium-low heat and add 1 tablespoon of water, cooking oil, or dairy-free butter to coat the bottom of the pot. Add the onion and garlic and sauté for 2 to 3 minutes, until tender and fragrant. You want them softened, not browned.

Brown the Mushrooms

Add the mushrooms and turn the heat to medium. Cook for about 5 minutes, until they release their juices, the liquid evaporates, and the mushrooms begin to brown slightly. This step builds so much flavor, so don’t rush it. Stir in the celery and sauté for another 2 to 3 minutes, just until it starts to soften. Add the dried thyme, sage, and oregano, then stir in the wild rice. Let everything get coated in those cozy herbs.

Add Broth & Squash

Pour in the water and add the vegan “chicken” bouillon cubes. Increase the heat and bring the soup to a gentle simmer for 10 minutes so the wild rice can get a head start. Pour in the cubed butternut squash. Bring the soup to a boil, then reduce the heat to a gentle simmer for about 30 minutes, until the squash and rice are tender. Make it Creamy

Pour in the coconut milk, coconut aminos, and nutritional yeast. Season with salt and pepper, then stir everything together. Add the cannellini beans and finely chopped Tuscan kale. Stir until the kale softens in the hot soup.

Ingredients
  

  • 1 yellow onion, diced
  • 5 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 4 stalks celery, finely chopped
  • 2 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried oregano
  • 1 cup dry wild rice
  • 8 cups water
  • 4 cubes vegan “Chicken” bouillon
  • 4 cups butternut squash, cut into 1/2” cubes
  • 14 oz canned coconut milk
  • 2 tbsp coconut aminos
  • 1 tbsp nutritional yeast
  • 1 tsp salt and pepper, more or less to taste
  • 14 oz canned cannellini beans, drained
  • 8 Tuscan kale leaves, finely chopped
  • squeeze of lemon

Method
 

  1. Heat a large Dutch oven over medium-low heat and add 1 tbsp of water, cooking oil, or dairy-free butter to coat.
  2. Add in the onion and garlic and sauté for 2-3 minutes until tender and fragrant. Add in the mushrooms and turn heat to medium. Cook for about 5 minutes until they've released their juices, liquid has evaporated, and they have browned slightly. Add in the celery and sauté for another 2-3 minutes.
  3. Season with the dried herbs and stir in the rice. Pour in the water, add the bouillon cubes, and increase the heat to a gentle simmer for 10 minutes.
  4. Pour in the butternut squash. Bring to a boil, then reduce the heat to a gentle simmer for 30 minutes, until the squash and rice are tender.
  5. Pour in the coconut milk, coconut aminos, nutritional yeast and season with salt and pepper. Add the beans, kale and stir to combine. Finish with a squeeze of lemon and season to taste.
