The Best Watermelon Salad Ever

This Watermelon and Cucumber Salad is the ultimate no-lettuce summer salad made with juicy watermelon, strawberries, crisp Persian cucumbers, creamy avocado, fresh mint, dairy-free feta, pistachios, red onion, lime, maple, and sea salt. It’s sweet, salty, tangy, crunchy, refreshing, and perfect for Labor Day, summer parties, cookouts, or one final celebration of the season.

The Summeriest Salad of All

There are certain recipes that just taste like summer, and this might be the most summery recipe I’ve ever made!

Juicy watermelon. Sweet strawberries. Crisp cucumber. Creamy avocado. Fresh mint. Salty dairy-free feta. Crunchy pistachios. Just enough red onion. And the simplest lime-maple dressing that somehow makes everything taste even brighter. It’s sweet, salty, tangy, creamy, crunchy and ridiculously refreshing and somehow, every single bite tastes a little different from the last.

Last weekend, as we were beginning to reluctantly say goodbye to summer in Aspen, I made a massive batch of this salad for a party of nearly 100 people at the top of Aspen Mountain. And listen, transporting watermelon for 100 people up a mountain is a level of commitment I reserve for recipes I REALLY believe in. Thankfully, this one did not let me down!

The bowl was demolished, people kept coming back to ask what was in it, and one person told me it was quite literally one of the best things they had ever tasted. Dramatic? Maybe. But I’m also not going to argue with them. This watermelon salad is the perfect way to say goodbye to this sweet, sweet season. It’s easy enough for a weeknight, pretty enough for a party, and refreshing enough to earn a permanent spot at every Labor Day weekend table.

Why You’ll Love This Watermelon Cucumber Salad

I think what makes this watermelon salad recipe so good is that it isn’t just watermelon with a little mint and a sprinkle of feta. There is SO much happening here. Strawberries double down on the sweetness, cucumber makes it extra refreshing, avocado adds richness, pistachios bring the crunch, red onion gives it a little bite, and salty dairy-free feta balances all that juicy fruit.

Then everything gets hit with fresh lime zest and juice, maple syrup, and sea salt, plus a little olive oil if you want it. Skip it if ya don’t. It’s an absolute explosion of flavor without needing a complicated dressing, a million ingredients, or having to worry about baby arugula getting soggy.

It’s also just easy; the ingredients do all the work so you don’t have to. It’s simply a matter of chopping, squeezing and tossing! There is not a whole lot of elbow grease in this recipe, yet it tastes so balanced, so complete and soooo summery. I imagine enjoying this after hopping out of the pool, and it’s just the best thing ever.

Ingredients For Cucumber Watermelon Salad

Every ingredient in this summer salad brings something important to the bowl: sweetness, crunch, creaminess, salt, brightness, or freshness. Here’s what you’ll need:

  • Watermelon: The main character. Watermelon brings juicy sweetness, hydration, and that unmistakable summer flavor. Cut it into small bite-sized cubes so every forkful gets a little bit of everything.
  • Persian Cucumbers: Add cool crunch and make the salad extra refreshing. Persian cucumbers are perfect because they have thin skin, fewer seeds, and a crisp texture that holds up well.
  • Avocado: Creamy richness that makes the salad feel more satisfying. Use one that is ripe but still slightly firm so it doesn’t get mushy when tossed.
  • Strawberries: Another summery layer of sweetness and brightness; they make the salad feel even more seasonal and complement the mint and avocado perfectly.
  • Fresh Mint: An obvious non-negotiable if you ask me. It makes the whole salad taste fresh, cooling, and vibrant.
  • Pistachios: Perfect for another layer of texture, saltiness, and a little richness. Getting a bite with a pistachio in it feels like winning the lottery!
  • Red Onion: Brings sharpness and balance, but only after we’ve soaked it first to remove that intense sulfuric bite. This gives you the flavor without the onion breath; thank me later!
  • Dairy-Free Feta: The salty, creamy element that brings everything together. It balances the sweetness of the watermelon and strawberries and gives the salad that sweet-salty magic. Use this recipe if you want to make your own.
  • Lime: Zested and juiced to add brightness, acidity, and fresh citrus flavor which also helps keep the salad from tasting too sweet.
  • Maple Syrup: Just a little maple helps round out the dressing and enhance the natural sweetness of the fruits.

How To Make The Best Ever Watermelon Salad

Start with the watermelon

Cube your watermelon into bite-sized pieces. I like going with about 1/2-inch to 1-inch cubes so every bite is easy to eat and can pick up the dressing. Place the watermelon in a strainer nested over a bowl to let any excess liquid drain while you prep the rest of the ingredients. Use this tutorial for a quick, easy way to cube your watermelon!

Soak the red onion

Add your thinly sliced red onion to a bowl of cold water for about 10 minutes. This helps remove that strong sulfuric bite while keeping the onion crisp and flavorful. Trust me, it works. Drain thoroughly before adding it to the salad.

Make the lime-maple dressing

Add the lime zest, lime juice, maple syrup, sea salt, and optional olive oil to a jar. Whisk or shake until combined. The dressing should taste bright, lightly sweet, and a little salty.

Prep the remaining ingredients

Slice the Persian cucumbers, dice the avocado, quarter the strawberries, chop the mint, and roughly chop the pistachios. Keep everything bite-sized so the salad is easy to scoop and eat.

Toss gently

Add the watermelon, cucumber, avocado, strawberries, mint, pistachios, soaked red onion, and dairy-free feta to a large serving bowl. Pour the dressing over top and gently toss to combine. Be careful here, especially with the avocado and feta. 

Serve right away

This salad is best served fresh, while the watermelon is juicy, the cucumbers are crisp, and the pistachios still have crunch. If you’re making it later, keep the ingredients separate and toss right before serving.

What to Serve with Watermelon Salad

While I’m nowhere near ready to say goodbye to summer, okay, maybe I’m almost ready; this feels like a pretty damn good way to celebrate the last of it. Make it for a Labor Day party, one final summer cookout, a backyard dinner, or honestly, just eat it straight out of the serving bowl while standing at your kitchen counter.

Tips for Making the Best Watermelon and Cucumber Salad

  • Drain the watermelon: Watermelon releases a lot of liquid. Letting it sit in a strainer while you prep keeps the final salad from turning watery too quickly.
  • Cut everything bite-sized: Smaller pieces make every bite more balanced. You want watermelon, cucumber, strawberry, mint, feta, and pistachio all showing up together.
  • Use ripe but firm avocado: If the avocado is too soft, it will break down when you toss it. Choose one that gives slightly but still holds its shape.
  • Soak the red onion: This is the easiest way to mellow the flavor while keeping the crunch. Don’t skip this if you’re sensitive to raw onion.
  • Toss gently: Watermelon, avocado, and dairy-free feta are delicate. Use a big spoon or clean hands and go slow.
  • Serve fresh: This salad is best right after tossing. If making ahead, prep the components separately and combine just before serving.
  • Taste before serving: Depending on your watermelon and strawberries, you may want a little more lime, salt, or maple.

Is this salad oil-free? It can be. The olive oil is optional, so simply leave it out if you prefer an oil-free version.

Ingredients
  

  • 4 cups watermelon, cubed
  • 2 Persian cucumbers, sliced
  • 1 avocado, not too ripe, diced
  • 6 oz strawberries, quartered
  • cup mint leaves, chopped
  • ¼ cup pistachios, chopped
  • ¼ red onion, thinly sliced
  • ¼ cup dairy-free feta
  • 1 lime, zested and juiced
  • 1 tbsp maple syrup
  • ½ tsp sea salt
  • 1 tbsp olive oil, optional

Method
 

  1. Start by cubing your watermelon and make sure each bite is the perfect bite sized piece - I like to go with about 1/2" - 1". Place them in a strainer nested in another bowl to let excess liquid drain.
  2. Add your red onion to a bowl of water for 10 minutes to remove that sulfuric bite - trust me, it works! Drain thoroughly.
  3. Add the lime zest, maple syrup, salt and optional olive oil to a jar and whisk to combine.
  4. Add all salad ingredients to a large serving bowl and pour the dressing over. Gently toss to combine - this one is best served right away, so if you're keeping it for later, keep all ingredients separate!
