Equipment
- 8x8 glass dish
Ingredients
- 1 cup cashew butter, or nut/seed butter of choice
- 2-3 tbsp maple syrup
- 1 tsp vanilla
- ¼ tsp salt
- ½ tsp cinnamon
- ⅓ cup toasted sesame seeds
- ⅓ cup chia seeds
- ⅓ cup flax seeds
- ⅓ cup hemp seeds
- ⅓ cup pumpkin seeds
- ⅓ cup goji berries
- ⅓ sugar-free vegan dark chocolate chips
Method
- If your nut butter is too hard, soften it in the microwave for 30 seconds or so. Add all ingredients to a bowl except for pumpkin seeds, berries, and chocolate chips. Use a fork to mix well and combine thoroughly.
- Gently fold in pumpkin seeds, berries, and chocolate chips.
- Line an 8x8 glass dish with parchment paper. Pour mixture into dish and use your hands to press down. Sprinkle with extra berries, pumpkin seeds, and chocolate chips.
- For perfectly flat bars, use a metal spatula to press down firmly.
- Place in freezer for 20-30 minutes before slicing into bars. Store bars in an air tight container in the fridge (or in the freezer) for easy snacks all week long!

You forgot cup in the chocolate chips. Maybe the flaxseeds should be ground for greater digestibility? It sounds good. I may try it.
Thank you.
Hi Tammy, the 1/3 cup of chocolate chips is added to the recipe in the third step. You’re more than welcome to blend your flax seeds if you’d like! I hope you enjoy this recipe.
