Super Seed Birdie Bars

Spring has SPRUNG, the birds are CHIRPING, and it’s the PERFECT day to make my Super Seed Birdie Bars! This power packed snack is loaded with fiber, plant protein, omega 3s, antioxidants, zinc, calcium, and magnesium. These nutrients help to significantly improve digestion, increase metabolism, lower cholesterol, improve heart health, and boost collagen! WHOA, right?! Health benefits aside, these bars are SO TASTY and the perfect mid afternoon snack to power you through your work day. Clinton ate 2 before I could even take a picture, so they definitely have his approval!
Prep Time 10 minutes
Cook Time 20 minutes
Servings: 16 bars
Course: Dessert, Healthy Snack, Snack

Equipment

  • 8x8 glass dish

Ingredients
  

  • 1 cup cashew butter, or nut/seed butter of choice
  • 2-3 tbsp maple syrup
  • 1 tsp vanilla
  • ¼ tsp salt
  • ½ tsp cinnamon
  • cup toasted sesame seeds
  • cup chia seeds
  • cup flax seeds
  • cup hemp seeds
  • cup pumpkin seeds
  • cup goji berries
  • sugar-free vegan dark chocolate chips

Method
 

  1. If your nut butter is too hard, soften it in the microwave for 30 seconds or so. Add all ingredients to a bowl except for pumpkin seeds, berries, and chocolate chips. Use a fork to mix well and combine thoroughly.
  2. Gently fold in pumpkin seeds, berries, and chocolate chips.
  3. Line an 8x8 glass dish with parchment paper. Pour mixture into dish and use your hands to press down. Sprinkle with extra berries, pumpkin seeds, and chocolate chips.
  4. For perfectly flat bars, use a metal spatula to press down firmly.
  5. Place in freezer for 20-30 minutes before slicing into bars. Store bars in an air tight container in the fridge (or in the freezer) for easy snacks all week long!

  1. You forgot cup in the chocolate chips. Maybe the flaxseeds should be ground for greater digestibility? It sounds good. I may try it.
