This power packed snack is loaded with fiber, plant protein, omega 3s, antioxidants, zinc, calcium, and magnesium. These nutrients help to significantly improve digestion, increase metabolism, lower cholesterol, improve heart health, and boost collagen! WHOA, right?! If your nut butter is too hard, soften it in the microwave for 30 seconds or so. Add all ingredients to a bowl except for pumpkin seeds, berries, and chocolate chips. Use a fork to mix well and combine thoroughly.
Gently fold in pumpkin seeds, berries, and chocolate chips.
Line an 8x8 glass dish with parchment paper. Pour mixture into dish and use your hands to press down. Sprinkle with extra berries, pumpkin seeds, and chocolate chips.
For perfectly flat bars, use a metal spatula to press down firmly.
Place in freezer for 20-30 minutes before slicing into bars. Store bars in an air tight container in the fridge (or in the freezer) for easy snacks all week long!
