2. Squash Prep:

  • Thoroughly wash the spaghetti squash and pat it dry.
  • To make slicing easier, give the squash a few pokes with a fork and microwave it for 2-3 minutes. This step, while optional, softens the squash and makes it easier to handle.

 

3. Slicing and Seeding:

  • Carefully slice off the top and bottom ends of the squash.
  • Cut the squash into 1” rounds – this shape helps in creating longer, more pasta-like strands.
  • Using a spoon, scoop out and discard the seeds from each of the rings.

 

4. Seasoning and Baking:

  • Arrange the squash rounds on the prepared baking sheet.
  • Brush each side of the squash rounds with olive oil or coconut aminos for a hint of flavor.
  • Generously season with salt and pepper.
  • Bake in the preheated oven for 40 minutes, flipping the rounds halfway through for even cooking.

  • Once baked, remove the squash from the oven.
  • Allow it to cool for about 5 minutes, or until it’s comfortable to handle.

Ingredients
  

  • 1 spaghetti squash
  • olive oil or coconut aminos
  • salt and pepper

Instructions
 

  • Preheat your oven to 400 degrees and line a large metal baking sheet with parchment paper.
  • Wash your squash and pat it dry. Give it a few pokes with a fork. Put in in the microwave for 2-3 minutes to soften it up a bit. This step is optional but recommended for easier slicing.
  • Slice off the top and bottom and carefully cut into 1” rounds. Scoop out the seeds from each of the rings. Place them on the baking sheet and brush each side with olive oil or coconut aminos. Sprinkle generously with salt and pepper and bake for 40 minutes, flipping halfway through. Remove from the oven and let cool for 5 minutes until they're comfortable to handle. Use a fork to pull the strands from the peel and enjoy!
