Chocolate Peppermint Cookie Ingredients

Cookie Ingredients

  • Dairy-Free Butter: Provides a creamy, rich base for the cookies. You can substitute with coconut oil or coconut butter.
  • Coconut Sugar: This refined sugar-free sweetener adds a subtle caramel-like flavor and make these cookies the perfect amount of chewy.
  • Maple Syrup: Adds moisture and enhances the sweetness.
  • Vanilla & Peppermint Extracts: The perfect flavor duo to make these cookies taste like holiday joy!
  • Soy Milk: Keeps the dough moist and ensures a smooth texture. Use any dairy free milk of preference.
  • Gluten-Free Flour: Keeps the cookies light while making them allergy-friendly. If you are not gluten free you can use all purpose flour at the same measurement.
  • Cacao Powder: For a deep, rich chocolate flavor.
  • Sea Salt & Baking Soda: Helps balance flavors and provides lift.
  • Dark Chocolate Chips & Peppermint Baking Chips: Adds melty, chocolatey goodness with a festive peppermint crunch.

Topping Ingredients

  • Dairy-Free White Chocolate: Drizzle over the cookies for a touch of creamy sweetness.
  • Crushed Candy Canes: Adds a holiday sparkle and extra peppermint crunch.

How to Make Chocolate Peppermint Cookies

Mix the Dough

Preheat your oven to 350°F and line a baking sheet with parchment paper. In a mixing bowl, cream the dairy-free butter, coconut sugar, and maple syrup until fluffy. Add the vanilla extract, peppermint extract, and soy milk, mixing until combined.

Combine Dry Ingredients

In a separate bowl, whisk together the gluten-free flour, cacao powder, sea salt, and baking soda. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. Gently fold in the dark chocolate chips and peppermint baking chips.

Scoop, Bake, and Decorate

Scoop out 1.5-tablespoon portions of dough and roll into balls. Place on the prepared baking sheet and bake for 7 minutes. Allow cookies to cool for 5 minutes on the sheet, then transfer to a wire rack. Once cooled, drizzle with melted white chocolate and sprinkle with crushed candy canes.

How to Store Chocolate Peppermint Cookies

Store these cookies in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks; however, I doubt they will last that long!

How to Customize Your Chocolate Peppermint Cookies

  • Swap the Chips: Use semi-sweet chocolate chips or a mix of dark and white chocolate for variety.
  • Make It a Sandwich Cookie: Use two cookies to sandwich your favorite vegan frosting in the middle!
