Watermelon Gazpacho

If there is one thing I refuse to stop buying all summer long, it’s watermelon.

There is just something about cutting into a perfectly ripe one with the perrrrfect texture that feels like we’ve made it – it’s finally peak summer. I could happily eat it with a spoon straight from the rind (but prefer this cute cutting technique), and I often find myself finishing one before the day ends… but after making this watermelon gazpacho, I honestly don’t know if I’ll ever look at watermelon the same way again.

Eric and I spent time in Spain last fall, and I think we ordered gazpacho every chance we got. It’s cold, ridiculously refreshing, packed with fresh produce, and feels like something you’d order at a beautiful restaurant overlooking the Mediterranean (which we absolutely did).

I came home determined to recreate that same feeling, but with one of my favorite summer ingredients: sweet, juicy watermelon, and now is the time.

The Best Gazpacho

This recipe takes all of 10 minutes to make (maybe 15 if you get distracted) and doesn’t require you to turn on a single burner, which, if you’ve ever tried to cook during a 95-degree afternoon, is reason enough to make it. 

Everything gets tossed into a blender, blitzed until silky smooth, and finished with the prettiest little pile of fresh watermelon, cucumber, peppers, herbs, and lime. It looks ridiculously impressive for the amount of effort involved. Serve it as a starter before dinner, make it your lunch with some crusty bread, or pour it into little glasses for a summer party and let everyone think you spent hours in the kitchen. I won’t tell them the truth if you won’t!

What Is Gazpacho?

Gazpacho is a chilled soup traditionally made with fresh, raw vegetables, especially tomatoes, peppers, cucumbers, onions, and garlic, along with vinegar and olive oil.

Traditionally, gazpacho comes from southern Spain, where hot summers call for food that is cold, hydrating, and full of peak-season produce. It’s honestly such a quick and easy solution for soup lovers like me who refuse to eat something hotter than the sun!! My watermelon version is inspired by classic tomato gazpacho, but with a much-deserved summer twist. The result is a tomato watermelon gazpacho that’s slightly sweet, savory, tangy, fresh, and so cooling.

Watermelon Gazpacho Ingredients

Every ingredient in this watermelon tomato gazpacho has a purpose. Since the recipe is raw and simple, fresh ingredients really matter. Here’s what you’ll need:

  • Watermelon: Of course, the star of this cold watermelon soup. It adds natural sweetness, hydration, and a silky texture once blended. Use ripe, juicy watermelon for the best flavor!
  • Tomatoes: Bring acidity, savory flavor, and classic gazpacho depth that help balance the watermelon’s sweetness and bring it closer to a true gazpacho recipe.
  • Red Bell Pepper: Adds sweetness, color, and body when blended into the soup.
  • Jalapeño: For a subtle kick in the soup, if you want the jalapeño milder, remove the seeds.
  • Garlic: Brings sharpness and savory depth.
  • Red Onion: Adds bite and a little sweetness, helps create that classic gazpacho flavor, and balances the watermelon’s fruitiness.
  • English Cucumber: Keeps the soup crisp, cooling, and refreshing. English cucumber is great because the skin is thin and the seeds are small, so it blends smoothly.
  • Basil or Mint: Either herb will bring this gazpacho to life and add that bright, summery flavor. 
  • Red Wine Vinegar: Gives the gazpacho its tangy, savory backbone. It balances the watermelon’s sweetness and makes the soup taste bright rather than flat.
  • Olive Oil: You don’t have to use oil, but it helps emulsify the soup and gives it a slightly thicker, silkier texture. If you want a lighter version, you can skip it.
  • Garnish: Optional garnishes that add texture, freshness, and a restaurant-style finish.

How to Make Watermelon Gazpacho

Making this gazpacho is a lot like making a smoothie, so grab your high-speed blender and let’s get to it!

Add Everything to the Blender

Add the watermelon, tomatoes, red bell pepper, jalapeño, garlic, red onion, cucumber, basil or mint, sea salt, black pepper, red wine vinegar, and olive oil if using to a high-speed blender. If your blender is smaller, blend in batches so everything has enough room to move.

Blend Gazpacho Until Silky Smooth

Blend until the gazpacho is completely smooth and silky. You don’t want big pieces of onion, pepper, or cucumber here. Let the blender do its thing. Taste and adjust. Add more salt if the flavors feel muted, more vinegar if you want extra tang, or more herbs if you want it brighter.

Chill Before Serving

Transfer the gazpacho to the fridge and chill for at least 1 hour, preferably longer. This step matters. Chilling gives the flavors time to meld and makes the soup taste much more refreshing. Gazpacho is meant to be served cold, so let it get properly chilled before serving.

Make the Garnish & Serve

While the soup chills, add the finely chopped watermelon, red bell pepper, green onion, cucumber, mint, and lime juice to a small bowl. Stir to combine. This little garnish adds texture and makes the finished soup so pretty.

Pour the chilled gazpacho into bowls or small glasses and top with the garnish. Serve immediately while cold, fresh, and bright.

Watermelon Gazpacho Serving Suggestions

Wondering what to serve with watermelon gazpacho? You have options. Serve it as a light starter before dinner, especially with grilled vegetables, veggie skewers, a big salad, or crusty bread. For lunch, pair it with sourdough toast, avocado toast, a vegan sandwichchickpea salad, or a simple grain bowl.

If you’re serving this to a crowd and want to entertain with a playful, beautiful presentation, consider pouring it into small cups or shot glasses and serving it as a passed appetizer. It looks fancy, tastes incredibly refreshing, and takes almost no effort. 

How to Store Leftover Watermelon Gazpacho

Store leftover watermelon soup in an airtight container or jar in the refrigerator for up to 3 days. Give it a good stir or shake before serving, as it may separate slightly while it sits. This is normal.

Keep the garnish separate if possible so it stays fresh and crisp. Add it right before serving. I don’t recommend freezing this one because the fresh produce can become watery once thawed.

Tips for Making Gazpacho

  • Use ripe watermelon. Since watermelon is the main ingredient, it should be sweet, juicy, and flavorful.
  • Use good tomatoes. Fresh summer tomatoes make the biggest difference in this recipe, so make sure you use on-the-vine or local tomatoes.
  • Chill it long enough & serve very cold. Don’t put this in the freezer to get cold faster, but do make sure you give it time in the fridge to get super cold. I promise it tastes a lot better when it’s NOT room temperature! 
  • Taste after blending. Raw soups need proper seasoning. Don’t be afraid to add more salt, vinegar, herbs, or lime until it tastes balanced.
  • Blend until smooth. A high-speed blender gives the best silky texture.

Gazpacho FAQ

Is watermelon gazpacho sweet? It’s lightly sweet from the watermelon, but it’s balanced by tomatoes, cucumber, red onion, garlic, jalapeño, red wine vinegar, salt, and herbs. The final flavor is fresh, savory, tangy, and refreshing.

Can I make watermelon gazpacho ahead of time? Yes. In fact, it tastes even better after chilling for a few hours. Make it the morning of or the day before serving.

How long does watermelon gazpacho last? It will last up to 3 days in an airtight container in the refrigerator. Stir well before serving.

Is this a traditional gazpacho recipe? Not exactly. This recipe is inspired by traditional Spanish gazpacho, but it includes watermelon for a sweet summer twist.

Can I make this spicy? Yes. Leave some seeds in the jalapeño, or add an extra half jalapeño for more heat.

Can I strain the gazpacho? You can, but you don’t have to. If you want an ultra-smooth, restaurant-style texture, strain it through a fine-mesh sieve after blending.

Ingredients
  

  • 4 cups cubed watermelon
  • 2 medium tomatoes
  • 1 red bell pepper, seeds and stem removed
  • 1 jalapeno, seeded
  • 1 garlic clove
  • ½ medium red onion
  • 1 English cucumber
  • ¼ cup basil or mint
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 3 tbsp red wine vinegar
  • 1-2 tbsp olive oil, optional, for emulsifying and thickness
Garnish Ingredients
  • ½ cup watermelon, finely chopped
  • ¼ cup red bell pepper, finely chopped
  • 1 green onion, thinly sliced
  • ½ cup cucumber, finely chopped
  • 1 tbsp mint leaves, finely chopped
  • 1 tbsp lime juice

Method
 

  1. Add all ingredients to a blender and puree until silky smooth. Season to taste.
  2. Chill for at least an hour, preferably longer.
  3. Meanwhile, add all ingredients for the garnish to a bowl and stir to combine.
  4. Serve cold, topped with the garnish!
