A velvety Avocado Chocolate Mousse Tart with a grain-free crust. Made with only 9 ingredients, it’s gluten-free, vegan, and showcases the creaminess of avocados. Perfect for impressing guests or satisfying your sweet tooth.
Preheat oven to 350. Add all ingredients for crust, except water, to a food processor. Blitz until well combined and crumbly. Add 1 tbsp water at a time and blitz until a dough is formed. Transfer to a 10” tart pan and use clean hands or a rubber spatula to press into an even layer. Prick with a fork many times and bake for 12 minutes. Remove and set aside to cool.
Place the chocolate chips and coconut oil or butter in a microwave safe dish. Microwave at 50% power in 30 second increments, stirring each time until melted. Give your food processor a quick rinse. Add in all the ingredients for the mousse, including the melted chocolate mixture, and mix on high until fluffy, smooth, thick and creamy. Stop to scrape the sides down as needed, and adjust to your desired sweetness level by adding more maple syrup if desired.
Pour the mousse into the prepared crust and use a rubber spatula to smooth out. Top with berries. Place in the fridge for at least 2 hours before enjoying, or overnight.
