⅛tspfine sea salt
Snickerdoodle Cookies Ingredients
2¼cupssuper fine blanched almond flour
⅓cuptapioca flour
1tspbaking powder
½tspbaking soda
½tspsea salt
½tspcinnamon
⅔cupmaple syrup
1tspvanilla extract
Cinnamon Sugar Coating Ingredients
¼cupcoconut sugar
1tbspcinnamon
Instructions
Preheat oven to 375 and line a metal baking sheet with parchment paper.
Heat a cast iron skillet over medium heat and add the apples. Sauté for about 8 minutes until tender and juicing, stirring occasionally, until soft. Add in the fruit spread, water mixed with tapioca flour, and sea salt, stirring until the mixture thickens a bit. Set aside.
While apples are cooking, prepare the cookie dough by combining all dry ingredients in a bowl. Add in the maple syrup and vanilla extract and use an electric mixer to combine just until all ingredients are incorporated.
Combine coconut sugar and cinnamon in a small shallow bowl. Use a 1.5 tablespoon cookie scoop to scoop out cookie dough and roll in your hands to make a ball. Drop into the cinnamon sugar mixture and roll to evenly coat. Transfer to the prepared baking sheet.
Use a rounded tablespoon to flatten the cookies and create a divot or well in the middle. Bake for 9-10 minutes, until the edges are lightly golden. Use the tablespoon to reestablish the well.
Fill each cookie with the apple pie filling, and enjoy warm or cool.
